Black-Eyed Basmati Salad

Directions Rice and peas: In a small saucepan equipped with a lid, add 3 cups of the water and 1/2 teaspoon salt
- 5 cups water, divided
- 1/2 teaspoon kosher salt
- 1/2 cup dry black-eyed peas
- 1/2 cup basmati rice
- 1 teaspoon minced garlic
- 3 tablespoons Dijon mustard, preferably country style
- 4 tablespoons apple cider vinegar, best quality
- 1 tablespoon honey
- 1 tablespoon minced shallot
- 1 tablespoon finely chopped cilantro leaves
- 1 teaspoon freshly cracked black pepper
- 1/2 teaspoon kosher salt
- 1/4 cup diced (1/4-inch) red onion
- 1/2 cup seeded and diced (1/4-inch) red bell pepper
- 1/3 cup sliced Spanish olives
Best Fettuccine Alfredo

- 2 sticks butter, softened
- 1/2 lb grated Parmesan cheese, plus more for serving
- 1 tsp garlic powder
- Salt
- 1 lb fettuccine
SLOW COOKER HAM AND 15 BEAN SOUP

Instructions Place beans in slowcooker, cover with water
- 1 package 15 or 16 bean soup mix
- 1 lb. lean ham, with all visible fat trimmed
- 1 ham bone or ham hock
- 1 cup onion, chopped
- 1 15 oz. can diced or stewed tomatoes
- 1 tsp. chili powder
- 1 tsp. red pepper flakes (optional)
- Juice from 1 lemon
- 1-2 cloves minced garlic
- 6-8 cups water
- Salt and pepper to taste

- Toppings:
- 1 cup (or as much as you like) Shredded cheddar cheese

Banana Bread Bars with Brown Butter Frosting

- Brown Butter Frosting:
- 1-1/2 c. sugar
- 1 c. sour cream
- 1/2 c. butter, softened
- 2 eggs
- 1-3/4 (3 or 4) ripe bananas, mashed
- 2 tsp. vanilla extract
- 2 c. all purpose flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1/2 c. chopped walnuts (optional)
- 1/2 c. butter
- 4 c. powdered sugar
- 1-1/2 tsp. vanilla extract
- 3 tbsp. milk
Meghan’s Chicken Tortilla Soup

When I made this for my family, I got nothing but “mmmmm”s in return
- optional garnishes:
- 1 onion, chopped
- 2 sweet bell peppers (preferably red, orange, or yellow), chopped
- 3 garlic cloves, minced
- 1 T. olive oil
- 2 tsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. cumin
- 1 28-oz. can diced tomatoes
- 32 oz. chicken broth
- 1 14-oz. can corn, drained
- 1 14-oz. can black beans, rinsed and drained
- 2 boneless chicken breast halves, cooked and shredded into bite-size pieces (roasted deli chicken works great!)
- 2 tsp. freshly squeezed lime juice
- fresh avocado, cut into 1″ chunks
- fresh mozzarella, cut into 1″ chunks
- chopped fresh cilantro
- chopped green onions
- tortilla crisps (shown in photos, found near the croutons and salad toppings in the fresh produce area)
