Tomato Rosemary Focaccia

Unroll pizza crust onto a greased baking sheet
- 1 tube (13.8 ounces) refrigerated pizza crust
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed, divided
- 2 to 3 plum tomatoes, thinly sliced
- 1 small red onion, thinly sliced
Crunchy Pea Salad

In a bowl, combine the first four ingredients
- 1 package (10 ounces) frozen peas, thawed
- 1 can (8 ounces) sliced water chestnuts, drained
- 1 cup thinly sliced celery
- 1/2 cup sliced green onions
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon seasoned salt, optional
Chicken Prosciutto

Pound chicken breast w/ mallet until evenly flat
- 4 chicken breasts, boneless & skinless
- 4 small slices Swiss cheese, cut to fit breasts
- 4 thin slices prosciutto
- flour
- 1 1/2 c cream
- 3/4 c wine
- 2 t soy sauce
- 3 T Romano cheese
- 1/2 c butter
- Parsley, garnish
Summer Spaghetti Salad

Cook spaghetti according to package directions; drain and rinse in cold water
- 1 package (16 ounces) thin spaghetti, halved
- 3 medium tomatoes, diced
- 3 small zucchini, diced
- 1 large cucumber, halved, seeded and diced
- 1 medium green pepper, diced
- 1 medium sweet red pepper, diced
- 1 bottle (8 ounces) Italian salad dressing
- 2 tablespoons grated parmesan cheese
- 1-1/2 teaspoons sesame seeds
- 1-1/2 teaspoons poppy seeds
- 1/2 teaspoon paprika
- 1/4 teaspoon celery seed
- 1/8 teaspoon garlic powder
Beer Bread

Mix the first 3 ingredients together with a fork until the flour is completely moist
- 3 c self-rising flour
- 1/3 c sugar
- 1 can beer
- 3 Tb melted butter
Colby Corn Chowder

Place potatoes in Dutch oven; sprinkle w/ salt and cover with water
- 6 lg potatoes, peeled & cubed
- 1 tsp salt
- 1 lg onion, chopped
- 1/4 c butter
- 6 bacon strips, cooked & crumbled
- 3 c milk
- 8 oz colby cheese, cubed (or cheddar)
- 2 pkgs frozen corn, optional
Vichyssoise (Potato Leek Soup)

Melt the butter in a 5qt saucepan and add the leeks
- 6 c chopped leeks (about 2 medium)
- 6 medium potatoes, peeled and diced
- 4 T butter
- 4 c chicken or turkey stock & water
- 1 tsp salt
- 1 c milk
- 1/4 c sour cream or plain yogurt
- add ham or bacon for flavor
Penuche Icing

- 1/2 c butter
- 1/4 c milk
- 1 c brown sugar
- 1 3/4 - 2 c powdered sugar
Twist Tree Bread

Combine 1 1/2 c flour, yeast and baking soda
- 2 3/4 to 3 c flour
- 1 env yeast
- 1 egg
- 2 T butter
- 1 t salt
- 1/4 c shortening
- 1/4 c sugar
- 1 c buttermilk
- 1/4 t baking soda
Cucumbers in Cream

In a large bowl, gradually whisk the vinegar into the cream
- 1/4 cup white vinegar
- 1 cup heavy whipping cream
- 5 medium cucumbers, sliced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
