Blueberry Pie V

Preheat oven to 425°. Mix sugar, cornstarch, salt, and cinnamon and sprinkle over blueberries
- 3/4 c white sugar
- 3 T cornstarch
- 1/4 t salt
- 1/2 t ground cinnamon
- 4 c fresh blueberries
- 1 recipe pastry for 9 inch double crust pie
- 1 T butter
Fresh Blueberry Pie I

Preheat oven to 450°. Prepare pastry for 2 crust pies
- 1 recipe pastry for a 9 inch crust
- 4 cups fresh blueberries
- 2/3 c white sugar
- 2 T all-purpose flour
- 1 T quick-cooking tapioca
- 1/4 t ground nutmeg
- 1/4 t salt
- 1 T grated lemon zest
- 1 1/2 T lemon juice
- 1/2 T butter
Julian's Cheese Manicotti

Gently saute in oil, onion until translucent (5mn) Add pasta, stir
- 1 lg onion, chopped
- 4 garlic cloves, pressed
- 2 T olive oil
- 2 6oz can tomato paste & water
- 2 T finely chopped fresh oregano
- 1 small bay leaf
- 1 t salt
- 1/2 t fresh ground black pepper
- 14 manicotti shells
- 1 t oil
- 1 1/2 c ricotta cheese
- 6 eggs
- 3/4 lb fontina cheese, grated
- 3/4 lb mozzarella cheese, grated
- 1/4 lb parmesan, freshly grated
- 6 T butter, soft
- 1 t salt
- 3/4 t pepper
- 3 T fresh basil
- extra parm
Party Chicken Casserole

Poach chicken breasts in chicken stock until tender, drain, and set aside
- 6 chicken breasts poached in chicken stock
- 7 hard-cooked eggs
- 2/3 cup wild rice
- 2/3 cup brown rice
- 2 tab. butter, melted
- 1 tab. olive oil
- 2 medium onions, chopped
- 3 1/2 cups chopped celery
- 3 cans (8-oz.) water chestnuts, chopped
- 1/2 cup chicken stock
- 1 1/2 cups slivered almonds
- 2 teas. lemon pepper
- 1 1/2 cups mayonnaise
- 1 can (10 314 oz) cream of chicken soup
- 1 can (10 314 oz.) cream of soup
- 2 cups sour cream
- 1 1/2 cups grated cheddar cheese
Pork Chops

Combine soup, milk, sour cream, pepper, and salt
- 6 pork chops, seasoned and browned
- 1 can cream of celery soup
- 1/2 c milk
- 1/2 c sour cream
- 1/2 t salt
- pepper
- 1 c shredded cheese
- 1 24oz pkg hash browns, thawed
- 1 can Durkee's french fried onions
Manicotti

Melt the butter in a saucepan, and saute the onion and garlic until soft but not brown
- 1 tablespoon butter or margarine
- 1 cup finely chopped onion
- 1 clove garlic, minced
- 15-ounce can Italian-flavor tomato sauce
- 8 manicotti shells
- 1 1/2 cups ricotta
- 2/3 cup grated Swiss cheese (optional)
- 1/4 cup minced parsley
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon white pepper
- Dash nutmeg
- Parmesan cheese for topping
Cherry Chip Scones

In a large bowl, combine the flour, sugar, baking powder and baking soda
- 3 cups all-purpose flour
- 1/2 cup sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 6 tablespoons cold butter (no substitutes)
- 1 cup (8 ounces) vanilla yogurt
- 1/4 cup plus 2 tablespoons milk, divided
- 1-1/3 cups dried cherries
- 2/3 cup vanilla or white chips
Zucchini Cake

In large bowl, combine dry ingredients; add oil and eggs-beat to mix
- FROSTING:
- 1 c oil
- 2 c sugar
- 4 eggs
- 2 c flour
- 2 c grated zucchini
- 2 tsp baking powder
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 T baking soda
- 8 oz cream cheese
- 1 stick butter
- 1 tsp vanilla
- 2 c powdered sugar
Spice Cake

- 2 c flour
- 1/2 c shortening
- 1 c brown sugar
- 1 c white sugar
- 1 tsp cinnamon
- 2 eggs
- 1 tsp baking soda
- 1 c sour milk

Bake in 350° oven 1.25 hours
- 1 lb. ground beef
- 1 lb. ham
- 1 lb. veal
- 2 c. bread crumbs
- 1/4 c. chopped onion
- 1/4 c. green pepper (optional)
- 1/2 t. salt
- 1/8 t. pepper
- 1/8 t. cloves
- 1 can celery soup
- 2 eggs
- 1/2 T Worcestershire sauce
