Summer Squash Soup
By Judycakes
Saute onion, garlic, and basil in a mix of butter and olive oil
- 1 medium onion
- 1-2 cloves garlic
- 1-2 leaves basil
- 1 1/2 qts water
- 2 T chicken base
- 2 medium zucchinis
- 4 small summer squash
- 3 Roma tomatoes
- 1/2 c bacon bits
- salt & pepper

Lemon Asparagus Soup Recipe

In a 2-qt. saucepan, saute the onion and celery in butter until tender
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 1/4 cup butter
- 2 tablespoons cornstarch
- 1 cup water
- 2 chicken bouillon cubes
- 3/4 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 2 cups milk
- 1/4 to 1/2 teaspoon grated lemon peel
- 1/8 teaspoon ground nutmeg
- Dash seasoned salt
Curry Chicken Soup

Summer Cucumber Salad

In a large bowl, combine the cucumber, tomato, green pepper and onion
- 1 medium cucumber, quartered and sliced
- 1 medium tomato, chopped
- 1/2 cup chopped green pepper
- 1/3 cup chopped sweet onion
- 2 tablespoons lime juice
- 2 tablespoons red wine vinegar
- 3/4 teaspoon dill weed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Wild Rice Soup

Mix all ingredients in crock pot
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can cream of potato soup
- 8 oz mushrooms, with juice
- small chopped onion
- 1 lb bacon, fried & crumbled
- 8 oz sharp cheddar cheese
- 1 pint half & half
- 1 pint water
- 2 medium potatoes, cut into small pieces
- 8 oz wild rice
Hearty Pork and Ale Stew

In a plastic bag, combine flour and red pepper
- 1 T flour
- 1/2 t crushed red pepper
- 1 lb boneless pork sirloin
- 2 cloves garlic, minced
- 1 T cooking oil
- 3 c vegetable broth
- 1 12oz can beer or 1 1/2 c vegetable broth
- 2 large sweet potatoes, peeled and cut into 1 in. cubes
- 3 medium parsnips, peeled and sliced 3/4 in. thick
- 1 medium onion, cut into thin wedges
- 2 T snipped fresh thyme or 1 1/2 t dried thyme
- 1 T brown sugar
- 1 T Dijon-style mustard
- 4 large Roma tomatoes, coarsely chopped
- 2 small green apples, cored and cut into wedges
Lettuce with Raspberry Dressing

Whisk together the first five dressing ingredients; fold in raspberries
- DRESSING:
- 1/3 cup vegetable oil
- 3 tablespoons sugar
- 2 tablespoons raspberry vinegar
- 1 tablespoon sour cream
- 1-1/2 teaspoons Dijon mustard
- 1/2 cup fresh raspberries
- SALAD:
- 6 cups leaf lettuce, washed, drained and chilled
- 1/2 cup coarsely chopped walnuts, toasted
Quick Savory Cheese Soup

In a large saucepan, saute onion in butter until tender
- 1/4 cup chopped onion
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 2 cups 2% milk
- 1 can (14-1/2 ounces) chicken or vegetable broth
- 1/2 cup shredded carrot
- 1/2 cup finely chopped celery
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 3/4 cup shredded part-skim mozzarella cheese
- Minced chives, optional
