Salmon Tacos with Guacamole

Heat oven to 400. In a small lidded pot, combine 1 ½ c water, rice and 1 T oil
- Cilantro-Lime Yogurt:
- 1 c RiceSelect Texmati Royal Blend (red, white, brown and wild rice)
- 1 T plus 2 t olive oil
- 3/4 t salt
- 1/4 t pepper
- 1 rip avocado
- 1 t lime juice
- 1 clove garlic, grated
- 1 T chopped cilantro, plus more for garnish
- 1 lb salmon (four 4 oz fillets)
- 1/2 t ground coriander
- 1/2 t sweet paprika
- 8 small corn tortillas
- 1/2 c Cilantro-Lime Yogurt (recipe below)
- Lime wedges
- 6 oz plan Greek yogurt
- 1 t lime juice
- 1 t lime zest
- 1 T chopped cilantro
- 1/8 t salt
Warm Artichoke and Salsa Dip

Drain atichokes; discarding marinade
- 1 12-oz jar marinated artichoke hearts
- 1/3 c sliced green onion
- 2 T bottled green salsa
- 1/2 c shredded Monterey Jack or white cheddar cheese (2 oz)
- 1/4 c dairy sour cream
- 1/4 c snipped fresh cilantro
Caramelized Figs with Honey and Cheese

Heat honey and fennel seeds in a large skillet over medium heat, stirring to combine
- 2 tablespoons honey, plus more for drizzling
- 1 tablespoon fennel seeds, chopped
- 1 pound ripe fresh figs, halved
- 1/4 cup almonds, toasted and chopped
- 2 ounces sheep's-milk cheese, such as Pecorino Toscano or manchego, shaved
- Wheatmeal crackers (such as Carr's), for serving (optional)
Spinach Kiwi Cooler

Combine the almond milk, spinach, kiwi, and banana in a blender
- 1/2 cup unsweetened almond milk
- 1 cup fresh spinach
- 1 kiwi, sliced
- 1/2 frozen banana, sliced
Roasted Pumpkin Seeds

Rinse and dry seeds. Mix with ingredients and roast at 275 for 10-20 mins till golden

Slow Cooker Open-Faced Turkey Sandwiches

- 3 1/2 pounds bone-in turkey breast half, skin removed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 box (32 ounce) low-sodium chicken broth
- 1 bay leaf
- 3 sprigs fresh thyme
- 2 teaspoon fresh oregano, chopped
- 6 slices hearty bread
- 1 envelope turkey gravy mix (such as McCormick)
- Mashed potatoes with butter
Saltimbocca Sandwiches

1. Heat broiler. Cook bacon in a large stainless skillet over medium heat 8 minutes, turning once
- 6 slices bacon, halved
- 6 slices roasted garlic bread or other rustic bread
- 2 tablespoons plus 1/4 teaspoon Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 6 thin-sliced chicken cutlets (about 1 1/4 pounds)
- 12 fresh sage leaves
- 6 slices provolone cheese
- Pinch each of salt and pepper
Corn and Crab Cakes

1. To prepare cakes, combine first 8 ingredients in a large bowl, stirring until well blended
- Cakes:
- 1/2 cup fresh yellow corn kernels
- 1/4 cup chopped red bell pepper
- 3 tablespoons chopped green onions
- 3 tablespoons canola mayonnaise
- 1 teaspoon Dijon mustard
- 3/4 teaspoon Old Bay seasoning
- 8 ounces crab claw meat, shell pieces removed
- 1 large egg, lightly beaten
- 1 1/2 cups panko (Japanese breadcrumbs), divided
- Cooking spray
- 1 1/2 tablespoons butter, divided
- Sauce:
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped green onions
- 3 tablespoons canola mayonnaise
- 2 teaspoons fresh lemon juice
- Dash of kosher salt
- 1 drop hot pepper sauce
Spicy Peanut Butter Dip

- 1/2 t Asian style chili garlic sauce, or to taste for desired heat level
