Banana 'Ice Cream' with Sweet and Salty Roasted Almonds

Freeze banana slices in a single layer on a tray or plate lined with parchment or wax paper
- 4 ripe bananas, peeled and sliced into thin rounds
- 1/4 c finely chopped roasted almonds
- 2 t plus 2 T good quality maple syrup, divided
- pinch of coarse sea salt
- 1/2 c unsweetened almond milk
- 1 t pure vanilla extract
Sweet Potato Wedges with Spicy Cinnamon Dip

Preheat oven to 425. Lightly coat a large rimmed baking sheet with cooking spray
- 3 sweet potatoes (1 1/2 lbs), scrubbed and cut into 1/2 in wedges
- 1 t vegetable oil
- 1/2 t ground cinnamon
- 1/4 c fat free sour cream
- 2 T pure maple syrup
- 1/4 t freshly grated lemon zest
- 1/8 t cayenne pepper
- 1 T chopped chives

1. Combine apple juice, water, salt, and cinnamon in a medium saucepan and bring to a boil

- 1/2 c chopped onion
- 2 garlic cloves, minced
