Sweet Potato Patties

In a small bowl, stir together all the ingredients for the dipping sauce
- Dipping sauce:
- 1/2 c plain Greek yogurt
- 2 T orange juice
- 1 T honey
- Patties:
- 2 large sweet potatoes (about 1 1/2 lbs)
- 1 1/2 T butter, softened
- 1 1/4 c panko bread crumbs
- 3 green onions, white and light green parts, finely chopped
- 1/2 c toasted pecan halves, finely chopped
- 3 T finely chopped fresh parsley
- 1/2 t salt
- 1/4 t pepper
- Vegetable oil, for frying
Sweet-Hot Peanuts

Preheat oven to 250. Line 15x10x1 baking pan with foil; set aside
- 2 T sugar
- 2 T olive oil
- 1-2 t ground chipotle chile pepper
- 1 1/2 t chili powder
- 1 t five-spice powder
- 3 c dry-roasted peanuts
Tomatoes with Crisp Fried Eggplant and Burrata

Place flour, eggs, and breadcrumbs in 3 separate wide, shallow bowls
- All-purpose flour, for dredging
- 3 large eggs, well beaten
- 2 cups fresh breadcrumbs
- 4 Japanese eggplants (1 to 1 1/4 pounds total), cut on the bias into 1/2-inch-thick slices
- 12 ounces cherry tomatoes, preferably in a mix of colors
- 2 tablespoons extra-virgin olive oil
- 1 cup fresh basil leaves, half of them torn
- Coarse salt and freshly ground pepper
- Vegetable oil, for frying
- 1 ball (about 7 ounces) burrata cheese
Gingerbread M&M Cookies

In a mixing bowl, mix brown sugar, butter, vanilla and eggs until well blended
- 1 1/3 c packed brown sugar
- 3/4 c butter, softened
- 1 t vanilla extract
- 2 eggs
- 2 1/4 c flour
- 1 t baking soda
- 1/2 t salt
- 1 c M&M Gingerbread Chocolate Candies (available during holiday season)
Hazelnut Carrot-Oat Cupcakes with Cream Cheese Frosting

Step 1 Preheat oven to 350 degrees
- 3/4 cup oat flour
- 3/4 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon coarse salt, plus more for frosting
- 7 tablespoons skinless hazelnuts, toasted, 1/4 cup finely chopped, 3 tablespoons coarsely chopped
- 1/3 cup vegetable oil
- 1/3 cup buttermilk
- 2 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon finely grated orange zest
- 1 cup packed finely grated peeled carrots (from 3 medium carrots)
- 8 ounces cream cheese, softened
- 1/2 cup confectioners' sugar
Avocado Coconut Toast

Toast bread and spread each with 1/2 t coconut oil
- 4 slices whole grain bread
- 2 t coconut oil
- 1 avocado
- salt and red pepper flakes
- squeeze of lemon
CE's Almond Butter Chocolate Chip Cookies

Preheat oven to 350°F. In a medium bowl, stir together first 5 ingredients until blended
- 1 cup unsalted almond butter, stirred well
- 3/4 cup Sucanat
- 1 large egg
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 3 oz dark chocolate (70% cocoa or greater), broken into small pieces
Chicken Paprikash with Spaetzle

1. Heat oven to 325 degrees
- 1 whole chicken (about 4 pounds), cut into 12 pieces (2 drumsticks, 2 thighs, 2 wings, breasts in thirds), skin removed
- 1 1/4 teaspoons salt
- 2 tablespoons vegetable oil
- 1 medium sweet onion, diced
- 1 sweet red pepper, diced
- 3 tablespoons all-purpose flour
- 2 tablespoons sweet paprika
- 1 tablespoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 2 cups low-sodium chicken broth
- 2 medium tomatoes, seeded and diced
- 1 cup sour cream
- 1 box (10 ounces) spaetzle (such as Maggi) or egg noodles, cooked
- Fresh chopped parsley, if desired
Arugula Walnut Pesto Pasta

1. Boil water for the pasta; salt until it tastes like the sea
- 16 ounces whole wheat fettuccine (fresh or dried)
- 5 ounces arugula, preferably fresh from the farmers market
- 1/3 cup grated parmesan or asiago cheese
- 1/2 cup walnuts 1 clove garlic, peeled
- 1/2 tsp salt, more to taste and for pasta water
- 1/2 cup canola or olive oil 1/4 cup walnut oil (can optionally be replaced by olive oil)
- 2 Tbsp fresh lemon juice
- Fresh-ground black pepper
Chili con Cupcake

1. Heat the oven to 375 degrees and coat a standard 12-cup muffin tin with cooking spray
- 2 large eggs
- 1 15 ounce can kidney beans, drained and rinsed
- 1 medium red bell pepper, finely diced
- 1 cup fresh or frozen corn kernels
- 1/4 cup tomato paste
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound extra-lean ground beef
- 1 cup grated cheddar
- 1/2 cup low-fat sour cream
- Sliced scallions for garnish
