Instant Berry and Coconut Sherbet (or Frozen Pops)

Combine everything in a food processor and pulse until completely smooth
- 2 c frozen berries
- 1/2 c coconut milk
- 2 T good quality maple syrup

Trim fat from meat. Cut meat into 1-in cubes
- 1 lb boneless beef sirloin steak, cut 1 in thick
- 1/4 c bottled red wine vinaigrette salad dressing
- 2 T snipped fresh thyme or 2 t dried thyme, crushed
- 2 T Worcestershire sauce
- 1/4 t garlic powder
- 12 oz tiny new potatoes, halved or quartered
- 2 small green and/or yellow sweet peppers; seeded and cut into 1-in squares
- 1 med red onion, cut into wedges

Preheat oven to 350 degrees
- 1/2 pound chopped pancetta (optional)
- 2 cups Texas pecans, chopped

- 1/4 teaspoon salt

- 2 T water

- 1 c sweet onion, sliced
- 2 t packed brown sugar
- 1/2 t dry mustard
- 2 c loosely packed fresh baby spinach leaves, coarsely chopped
- 6 T light semisoft cheese with garlic and herbs
- 3 whole wheat pita bread rounds, halved
