Shrimp and Feta with Garlic Bread Slices

Ingredients

  • 1/2 c bottled olive oil and vinegar salad dressing or Italian salad dressing
  • 1 t finely shredded lime peel
  • 3 lb large shrimp, peeled, deveined and cooked
  • 1/4 c snipped fresh herbs, such as dill, cilantro, and/or parsley
  • 1/4 c crumbled feta cheese
  • Lime wedges
  • 8-12 oz baguette-style French bread cut into slices

Preparation

Step 1

In a bowl combine salad dressing and lime peel. Add cooked shrimp. Toss to coat. Cover and chill for 30 mins or up to 4 hrs. Combine undrained shrimp, herbs and feta cheese. Stir to combine. Season with salt and pepper. Serve with lime wedges and garlic bread slices.
