Texas Pecan Praline Cheesecake

Preheat oven to 350 degrees
- Crust
- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 3 tablespoons butter, melted
- Cheesecake
- 3 packages cream cheese (8 ounces each), softened
- 1 1/4 cup light brown sugar, packed
- 2 teaspoons flour
- 4 large eggs, slightly beaten
- 1 1/2 teaspoons vanilla extract
- 1/2 cup finely chopped Texas pecans
- Garnish
- 2 tablespoons maple syrup
- 2 tablespoons finely chopped Texas pecans

Spicy Soy Kale Salad

Combine rice vinegar, soy sauce, sesame oil, brown sugar and chili garlic sauce in a bowl
- 1 T rice vinegar
- 1 T low- sodium soy sauce
- 2 t dark sesame oil
- 1/2 t brown sugar
- 1/4 t chili garlic sauce
- 4 c torn kale
- 2 c torn Savoy cabbage leaves
- 1 c shredded carrot
- 1 c sliced red bell pepper
- 1/2 c sliced radish
- 1/4 c chopped cilantro
Ice Cream Pumpkin Pie

Let ice cream soften. Mix together pumpkin, sugar, cinnamon, ginger, salt, nutmeg and cloves
- 1 qt vanilla ice cream
- 1/2 c canned pumpkin
- 1/2 c sugar
- 1 t cinnamon
- 1/4 t ginger
- 1/4 t salt
- dash of nutmeg
- dash of ground cloves

Chilled Plum-Oatmeal Pudding

STEP 1 Combine oats, 3/4 cup each almond milk and water, and salt in a saucepan
- 1/2 cup old-fashioned rolled oats
- 1 cup unsweetened almond milk
- Pinch of coarse salt
- 2 teaspoons pure maple syrup
- 1 plum, pitted and chopped
- Pinch of ground cinnamon
Cleansing Carrot-Ginger Soup

In a large stockpot over medium=low heat, add olive oil and onion
- 1 T olive oil
- 1 yellow onion, finely chopped
- 2 lbs organic carrots, peeled and roughly chopped
- 4 garlic cloves, minced
- 1 bay leaf
- 2 T grated fresh ginger
- 7 c vegetable stock
- 1/2 t sea salt
- 1/2 t freshly grated nutmeg
- 6 T Greek yogurt, to garnish
- 6 sprigs thyme, to garnish
Orange Julius

Blend all ingredients in blender until smooth
- 1 c milk
- 1 c water
- 1 16-oz frozen OJ
- 10-12 ice cubes
- 1 t vanilla
- 1/2 c sugar (optional)
Lamb Curry with Mint Pilaf

1. In a large frying pan over med-high heat, warm oil
- Curry:
- 1/3 c canola oil
- 3 yellow onions, chopped
- 4 cloves garlic, peeled and minced
- 2 -in piece of ginger, peeled and grated
- 2 t ground cumin
- 1 1/2 t cayenne pepper
- 1 1/2 t ground turmeric
- 2 c beef broth
- 3 lbs boneless leg of lamb, cut into 1-in cubes
- salt
- 6 c baby spinach
- 2 c plain yogurt
- Pilaf:
- 2 c basmati rice
- 3 T fresh mint, minced
Beet and Goat Cheese-Filled Endive

Toast almonds on a baking sheet until golden, about 3 minutes
- 1 beet, cooked, peeled and cubed
- 1/4 cup sliced almonds
- 1 to 2 heads of endive
- 3 ounces of goat cheese, crumbled
Balsamic Chicken with Spinach and Feta

Prepare a saute pan with cooking spray and cook chicken, seasoned with salt and pepper, over med heat

- 4 boneless skinless chicken breast halves
- salt and pepper to taste
- 1 6 oz bag fresh baby spinach
- 4 oz crumbled feta cheese
- balsamic vinegar to taste
