Stuffed Acorn Squash

Preheat oven to 400°F. Begin by slicing squash lengthwise
- 2 medium acorn squash
- 1 tsp extra-virgin olive oil
- Kosher salt and fine ground black pepper, to taste
- 1 fresh spicy chicken or turkey sausage, casings removed, crumbled
- 1 cup yellow onion, diced small
- 1 cup celery, diced small (save inner leaves for garnish)
- 1 tbsp garlic, minced
- 1 cup fresh spinach, washed and stemmed
- 8 oz low-fat sour cream
- 1/4 cup Parmigiano Reggiano, grated
Summer Fruit Pizza

Heat the oven to 400º. Spread the dough in an ungreased 12-inch pizza pan
- CRUST:
- 1 pound purchased pizza dough, or your favorite homemade recipe
- 1 tablespoon melted butter
- 2 tablespoons sugar
- FROSTING:
- 1 (8-ounce) package low-fat cream cheese at room temperature
- 1/4 cup sugar
- 1 teaspoon finely grated orange zest
- 1/2 teaspoon vanilla extract
- TOPPING:
- Assorted fruit (we used blueberries, banana slices, mandarin orange sections, seedless grapes, kiwi fruit slices, and strawberry halves)
Pesto-rubbed Pork Roast with Grilled Fruit

1. Coat pork with 1/4 c pesto
- 3-4 lbs boneless pork top loin roast (single loin)
- pesto sauce
- 4-5 apricots, plums and/or peaches, halved and pitted
- 3 T balsamic vinegar

1. Heat the oven to 450°
- 1 stick plus 2 tablespoons unsalted butter
- 1 cup (6 ounces) bittersweet chocolate chips or bittersweet chocolate bar broken in pieces
- 1 teaspoon vanilla extract
- 6 teaspoons granulated sugar
- 3 large eggs plus 1 egg yolk, at room temperature
- 1 1/2 cups confectioners' sugar
- 1/2 cup flour
- Big pinch of salt
Kathi's Curried Quinoa Salad

Bring 1¾ cup water and quinoa to a boil
- 1 cup dry quinoa
- 1 tsp curry powder
- 4 green onions, 1/4" dice
- 1/4 cup unsweetened dried cranberries
- 1/4 cup walnuts, chopped
- Sea salt and fresh ground black pepper, to taste
No-cook Muesli

In a blender, combine the yogurt, oats, nuts, flaxseed meal and maple syrup or honey
- 1 c plain nonfat yogurt
- 1 c quick oats
- 1/2 c whole nuts, such as almonds, walnuts or pecans
- 1 T flaxseed meal
- 1 T maple syrup or honey
- 1 c fresh blueberries
The Ultimate Chocolate Pudding

Set a fine-mesh sieve over a medium bowl
- 1/4 c sugar
- 1/4 c cornstarch
- 2 T unsweetened cocoa powder
- pinch kosher salt
- 2 c whole milk
- 4 large egg yolks
- 2 T unsalted butter, cut into pieces
- 3 oz semisweet chocolate, chopped
- 1 t pure vanilla extract
- whipped cream, for serving

- 8 sheets thawed frozen phyllo dough (each 17 by 12 inches)
- 2 to 3 tablespoons granulated sugar
- 3 1/2 ounces semisweet chocolate, melted
- FILLING:
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1/4 teaspoon coarse salt
- 3 1/2 ounces bittersweet chocolate, coarsely chopped (about 3/4 cup)
- 2 cups heavy cream
- 2 tablespoons confectioners' sugar
- Chocolate shavings, for serving, optional

- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 medium onions, chopped
- 6 cloves garlic, thinly sliced
- 2 tablespoons fresh thyme leaves, chopped or 2 teaspoons dried thyme, crushed
- 5 stalks celery, chopped
- 1 1/2 cups fresh parsley, chopped
- 1/2 cup fresh basil, very thinly sliced
- 10 cups cubed bread
- 1 cup dried cranberries, dried cherries,dried tomatoes (not oil-packed), and/or chopped smoked oysters
- 1 cup pecan halves, coarsely chopped
- 1 to 1 1/2 cups milk

- 4 large strawberries, quartered
