French Breakfast Muffins

Heat the oven to 375°. Butter the bottoms (only) of 12 standard-size muffin cups and set the pan aside
- MUFFINS
- 2 cups flour
- 2/3 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 large egg
- 1 cup plus 2 tablespoons milk
- 6 tablespoons unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- CINNAMON-SUGAR TOPPING
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons unsalted butter, melted and slightly cooled
Cheese & Sweet Pepper Cornbread

Cheese and sweet pepper cornbread is pleasing to look at and also a treat to eat! Dig in!
- 3/4 stick unsalted butter, melted, plus more, room temperature, for pan
- 1 1/2 cups yellow cornmeal
- 1 1/4 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons coarse salt
- 1 3/4 cups low-fat buttermilk
- 2 large eggs
- 8 ounces Monterey Jack cheese, shredded (about 3 cups)
- 1 can (4-ounces) hot or mild chopped green chiles
- 5 ounces sweet mini peppers (about 6), cut into thin rounds
Smoked Hot Potato Salad with Bacon, Green Apple and Smoky Moolten Brie

Prepare smoker and heat to 250 degrees, using hickory wood
- 3 lbs fingerling or new potatoes, washed
- 1 large sweet onion, quartered
- 1 T olive oil
- 1/2 t kosher salt
- 1/2 t fresh ground black pepper
- 1 4-in round Brie cheese (about 5 oz)
- 4 slices double-smoked bacon, sliced into 1/4 in strips
- 1 Granny Smith apple, cored and diced (skin left on)
- 2 green onions, thinly sliced on the bias
- 1/2 c mixed chopped herbs, such as parsley, chives and oregano
- salt and pepper to taste
Breakfast Banana Splits

Peel and cut each banana in half lengthwise
- 4 medium bananas
- 2 c 1% cottage cheese
- 6 T all-fruit strawberry jam
- 1/4 c roasted peanuts, chopped
- 1/8 t sea salt
Cherry Bomb

In an 8-ounce glass, stir together pink-grapefruit juice, cranberry juice, rum, and creme de cassis
- 1/4 cup fresh pink-grapefruit juice
- 1/4 cup unsweetened cranberry juice
- 1 ounce rum (preferably Bacardi 151)
- 1/2 ounce creme de cassis
- Ice
- 4 maraschino cherries (preferably dye-free)
Zucchini-Applesauce Chocolate-Chip Loaf

STEP 1 Preheat oven to 350 degrees
- Nonstick cooking spray
- 1 cup spelt flour, such as Bob's Red Mill
- 1 cup all-purpose flour
- 2 3/4 teaspoons baking powder
- 1 teaspoon coarse salt
- 3/4 teaspoon ground cinnamon
- 3 large eggs, room temperature
- 1/2 cup safflower oil
- 1/2 cup unsweetened applesauce
- 1 1/4 cups sugar
- 3 cups grated zucchini (from 1 large zucchini)
- 2 teaspoons pure vanilla extract
- 4 ounces bittersweet chocolate, finely chopped (about 3/4 cup)
Mix and Match Granola

Preheat oven to 350. Spread the mixed nuts on a medium rimmed baking sheet
- 1 c mixed nuts, such as almonds, pecans, walnuts, shelled pistachios and cashews
- 2/3 c mild vegetable oil
- 2/3 c clover honey
- 4 c rolled oats
- 3/4 c wheat germ
- 3/4 c wheat bran
- 1/4 c nonfat powdered milk
- 1 c mixed dried fruit, such as raisins, dried cranberries and dried cherries
- 1/4 c toasted seeds, such as sunflower or flax
Roasted Brussels Sprouts and Grapes

Heat oven to 375. On a large rimmed baking sheet, toss the Brussels sprouts and grapes with the oil, garlic, thyme...
- 1 1/2 lbs Brussels sprouts, trimmed and halved
- 1 lb red seedless grapes
- 3 T olive oil
- 2 cloves garlic, sliced
- 1 T fresh thyme leaves
- Kosher salt and black pepper
Pumpkin Steel Cut Oats

The night before: In microwave safe bowl, combine all ingredients except peanut butter
- 1 cup soy or low-fat milk
- 1/2 cup steel cut oats
- 1/2 can canned pumpkin
- Cinnamon to taste
- 1/2 tsp vanilla
- 1 tbsp. peanut butter
Cinna-Butter Bliss Smoothie

Combine all ingredients in a blender or vita mix
- 1 banana
- 2 tbsp almond butter
- 1 tbsp Hemp Hearts
- 1 date
- 1/2 tablespoon of cinnamon
- 1 cup of your favourite non-dairy beverage
