Mama Kaye's White and Dark Chocolate Chip Cookies

1. Heat oven to 375 degrees F
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 stick Crisco butter-flavored solid vegetable shortening
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup each white chocolate chips, milk chocolate chips and mint chocolate chips (or Andes mint pieces)
- 2 cups chopped walnuts
Zesty Greek Chicken with Mint

1. In a small bowl combine mint, lemon peel, 2 tsp
- 1/4 cup snipped fresh mint
- 2 teaspoons finely shredded lemon peel
- 4 teaspoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 mediumcucumber
- 1 6 ounce containerplain non-fat Greek yogurt
- 1 tablespoon minced garlic
- 1 pound chicken breast tenderloins, 1/4-inch thick
- 1 teaspoon cornstarch
- 3 tablespoons dry sherry
- 2 tablespoons peanut or vegetable oil
- 2/3 cup dried orzo
- 4 roma tomatoes, quartered (2 cups)
Creamsicle Slushy

Veggie and Cashew Burgers

1. Heat olive oil in a large frying pan with onion, carrot, leek, mushrooms, garlic and thyme
- 1 T olive oil
- 1 red onion, chopped
- 1 carrot, grated
- 1/2 small leek, chopped
- 1/2 c sliced mushrooms
- 1 garlic clove, crushed
- 1/4 t fresh thyme leaves
- 3/4 c cooked brown rice (2 oz uncooked)
- 1/2 c roasted, unsalted cashew nuts
- 1 T soy sauce
- 1/2 c grated Gruyere cheese
- 1 c fresh bread crumbs
- 1 T clear honey
- 1 egg yolk
- salt and pepper, to taste
- whole wheat flour, for dusting
- 2 T canola oil, for frying
Tahini & Honey Sauce
