Islander Pork or Chicken

Layer meat sprinkled with nutmeg and paprika
- 2 1/2 lbs boneless pork loin or boneless chicken breasts
- 5 cloves garlic
- 1/2 t nutmeg
- 1/4 t paprika
- 1/4 c ketchup
- 2 T orange juice
- 2 T honey
- 1 T soy sauce
- 2 T lemon juice
Berry-Orange Coffee Cakes

1. Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/3 cup butter, softened
- 1/4 teaspoon salt
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 cup whole-milk ricotta cheese
- 1 egg
- 1 tablespoon finely shredded orange peel
- 1 tablespoon orange juice
- 1/2 teaspoon vanilla
- 1 1/2 cups fresh cranberries, coarsely chopped
- 2 tablespoons finely chopped crystallized ginger
- Orange Glaze
- 1 cup powdered sugar
- 1 tablespoon orange juice
- 1/2 teaspoon vanilla
- 2 tablespoons butter, melted
- 1/2 teaspoon finely shredded orange peel
- 1/2 cup walnuts, toasted and chopped
Seared Scallops with Haricots Verts

1. Combine first 5 ingredients in a bowl
- 2 tablespoons finely chopped shallots
- 2 tablespoons chopped parsley
- 1 tablespoon fresh lemon juice
- 1 tablespoon dry white wine
- 1/2 teaspoon Dijon mustard
- 3/8 teaspoon black pepper, divided
- 2 quarts water
- 12 ounces haricots verts, trimmed
- 1 1/2 tablespoons butter
- 2 tablespoons canola oil
- 1 1/2 pounds sea scallops (about 16)
- 1/4 teaspoon kosher salt
Sweet and Spicy Party Wings

Preheat oven to 450 degrees F
- 6 pounds chicken wings (about 24) tips discarded, and wings split
- 4 cloves garlic, thinly sliced
- 1/2 cup unsalted butter, melted
- 1/2 cup honey
- 1/4 cup bottled green hot pepper sauce
- 3 tablespoons grated fresh ginger
- 1 teaspoon kosher salt
- 4 jalapeno peppers, seeded and chopped*

- 2 1/2 cups all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon coarse salt
- 2 sticks cold unsalted butter, cut into pieces
- 1/3 to 1/2 cup ice water
Quinoa and Chickpea Burgers

1. In a saucepan, bring quinoa and broth to a boil over medium-high heat
- 1/2 cup white quinoa
- 1 cup low-sodium vegetable broth
- 2 small slices whole-wheat bread
- 1 14-oz. can chickpeas, drained and rinsed
- 1 large egg
- 1/4 cup cilantro leaves
- 1 teaspoon cumin
- 1 small red chile
- Salt and freshly cracked black pepper
- 1 tablespoon vegetable oil
- 4 small whole-wheat pitas, for serving
- Salad greens, sliced avocado, sliced tomato and mayonnaise or yogurt, for serving, optional

- 3/4 c whole milk
- 1 stick unsalted butter

Easy Pita Chips

Heat oven to 400. Split the pitas horizontally to make 8 rounds
- 4 pitas
- 1/4 c olive oil
- 1/2 c grated Parmesan (2 oz)
- 1 t dried oregano
- Kosher salt and black pepper
Strawberry Salsa

Gently mix ingredients together in a bowl
- 1 pound strawberries, hulled and diced
- 1/4 cup thinly sliced scallions
- 1 jalapeno, seeded and diced
- 1/4 cup cilantro, chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon agave syrup or honey
- 1/8 teaspoon salt
