Herb-and-Cheese Rolls

Butter two 8-by-2-inch round cake pans
- 6 tablespoons unsalted butter, room temperature, plus more for pans and brushing
- 1 cup grated Parmesan
- 1/2 cup finely chopped fresh flat-leaf parsley
- 1 tablespoon plus 1 teaspoon chopped fresh thyme
- 1 teaspoon finely grated lemon zest
- 1/2 teaspoon freshly ground pepper
- Buttery Yeast Dough, herb variation (recipe on KI)
- All-purpose flour, for dusting
- Flaky sea salt, such as Maldon

Heat oven to 400 and coat an 11x7-in pan or 1 1/2-qt baking dish with cooking spray
- For the casserole:
- 1 T olive oil
- 5 c peeled and cubed butternut squash (about 2 lbs)
- 1 large onion, peeled and diced
- 2 med tart apples, such as Granny Smith, peeled, cored and cubed
- 1 t chopped fresh thyme
- 1/2 t salt
- 1/4 t pepper
