Mini Corn Muffins with Ham & Cheese

- cooking spray
- 1/2 c flour
- 1/2 c fine cornmeal
- 1 T sugar
- 1/2 t baking powder
- 1/2 t baking soda
- 1/4 t salt
- 1 egg
- 1/2 c lowfat buttermilk, well shaken
- 2 T vegetable oil
- 1/2 lb deli ham, thinly sliced
- 1/2 lb sharp cheddar, thinly sliced

- 1 1/2 cups dry quinoa
- 4 boneless, skinless chicken breasts (about 2 pounds), each sliced horizontally into 2 4-ounce cutlets
- Juice of 1 lemon
- 2 teaspoons kosher salt
- 2 tablespoons ground cumin
- 5 tablespoons olive oil
- 1/2 small red onion, minced
- 2 cloves garlic, minced
- 1/4 teaspoon ground cayenne pepper
- 2 cans (15 ounces each) low-sodium pinto beans, rinsed and drained
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh parsley
- 4 radishes, sliced
American Flag Pizza

Position rack in lower third of oven and preheat to 500 degrees
- 1 pound Quick Basic Pizza Dough
- Extra-virgin olive oil
- Salt and pepper
- 1 ⁄2 cup paper-thin slices of blue potato
- 1 teaspoon fresh rosemary leaves
- 2 cups shredded mozzarella
- 1 pint cherry tomatoes, sliced into 1⁄4-inch rounds

Adobo-Rubbed Port Tenderloin with Black Bean Pico De Gallo

For the pork: Heat oven to 350
- For the pork:
- 6 T paprika
- 2 T freshly ground black pepper
- 2 T coarse salt
- 1 T chili powder
- 2 T brown sugar
- 3 pinches cayenne pepper
- 24 oz pork tenderloin, trimmed, cut into 3 or 4-oz pieces
- 1/2 c arugula, loosely packed
- For the pico de gallo:
- 2 c black beans, cooked
- 4 med. tomatoes, diced
- 1/2 c red onion, diced
- 1/2 c green onion, chopped
- 2 T jalapeno pepper, minced
- 2 T fresh lemon juice
- 1 T chili powder
Teriyaki Salmon Skewers

In a small saucepan, heat the sesame oil over low
- 2 t sesame oil
- 2 t finely chopped fresh ginger (about a 1-in piece)
- 1 t finely chopped garlic
- 1/4 c tamari low-sodium soy sauce
- 2 T mirin
- 1/4 c OJ
- 2 T unseasoned rice wine vinegar
- 1 T brown sugar
- 2 t cornstarch
- 1 1/4 lbs salmon fillet from the tail section, skinned
- 24 6-in skewers, soaked in water for 30 mins
- black and white sesame seeds for garnish
Mediterranean Pork Pizza

Heat oil in a skillet over medium heat and cook pork until browned on the outside but still pink in the middle
- 10 ounces homemade or store-bought pizza dough
- 1/2 pound pork tenderloin, thinly sliced
- 1/2 cup tapenade
- 3 ounces goat cheese, crumbled
- 1 cup thinly sliced radicchio
- 1 cup thinly sliced fennel
- 2 tablespoons pine nuts
- 6 basil leaves, torn
Black Bean Couscous Salad

1. Bring chicken broth to a boil in a 2 quart or larger sauce pan and stir in the couscous
- 1 cup uncooked couscous
- 1 1/4 cups chicken broth
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon red wine vinegar
- 1/2 teaspoon ground cumin
- 8 green onions, chopped
- 1 red bell pepper, seeded and chopped
- 1/4 cup chopped fresh cilantro
- 1 cup frozen corn kernels, thawed
- 2 (15 ounce) cans black beans, drained
- salt and pepper to taste
Chicken with Wine-Herb Sauce

1. Slice through each chicken breast horizontally to form 2 thin cutlets
- 2 8-oz. boneless, skinless chicken breast halves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon plus 2 tsp. olive oil
- 2 tablespoons finely chopped shallot
- 1/3 cup dry white wine
- 1/2 teaspoon finely chopped fresh thyme
- 1 tablespoon cold, unsalted butter, diced
Better-For-You Muffins

Heat oven to 350 and grease the bottom only of 12 muffin cups
- 1 1/2 c canned pumpkin
- 1/2 c oil
- 2 large eggs
- 1 t vanilla extract
- 1/2 c packed brown sugar
- 1 1/2 c flour
- 2 1/2 t pumpkin pie spice
- 11 t baking powder
- 1/2 t baking soda
- 1/2 t salt
Cajun Shrimp Stir-Fry

1. Toss shrimp with Cajun spice seasoning and set aside
- 1 lb large shrimp, peeled and deveined
- 1 tbsp cajun seasoning
- 2 tsp canola oil
- 2 green peppers, seeded , inner ribs removed and cut into strips
- 2 red peppers, seeded , inner ribs removed, and cut into strips
- 2 garlic cloves, minced
- 1/2 cup white wine (have a glass while cooking if you need to unwhine)
- 1 tbsp lemon juice
- hot sauce
- 2 cups cooked brown rice
