Butternut Squash Posole

1. In a Dutch oven, heat oil over medium-high heat
- 1 tablespoon olive oil
- 1 1/2 pounds skinless bone-in chicken thighs
- 3 stalks celery, sliced
- 2 medium onions, cut into wedges
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 6 cups reduced sodium chicken broth
- 1 15 ounce can white hominy, rinsed and drained
- 1 1/2 pounds butternut squash, peeled, seeded, and cut into chunks
- 3 cups chopped kale or chard
- 1/4 cup chopped fresh cilantro
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Sliced radishes (optional)
- Lime wedges (optional)
Beef and Beer Chili

Heat a large soup pot over med-high heat
- 1 lb extra-lean ground beef
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1/2 red bell pepper, diced
- 1/2 c dark beer
- 1 can (15 oz) diced fire-roasted tomatoes
- 2 T chili powder
- 1/2 t cumin
- Salt and pepper to taste
- 1 can (15 oz) pinto beans, drained
Cherry Amaretto Pie

Make crust: In a food processor, pulse flour, sugar and salt
- Crust:
- 2 1/4 cups all-purpose flour
- 2 Tbsp. sugar
- 1/2 tsp. fine sea salt or table salt
- 1/2 cup (1 stick) cold unsalted butter, cut into 1/2" cubes
- 1/2 cup ice-cold water
- Filling:
- 3/4 cup plus 2 tsp. sugar, divided
- 3 Tbsp. cornstarch
- 1/4 tsp. fine sea salt or table salt
- 5 cups pitted cherries (about 2 pounds)
- 1/4 cup Amaretto
- 2 Tbsp. lemon juice (from 1 lemon)
- 1/2 tsp. ground cinnamon
- 1 Tbsp. unsalted butter, cut into 1/2" cubes
- 1 1/2 tsp. whole milk
Homemade Sherbet

Blend frozen peaches and milk until creamy and smooth
- 6 large ripe peaches, peeled, sliced and frozen
- 1 c sweetened condensed milk
Spanish Beef Stew

1. Heat oil in a large, heavy pot over high heat
- 3 T olive oil
- 2 lbs cubed beef for stew (recommend using bone-in chuck arm roast and cook bone with the meat)
- 3 pieces bacon, chopped (recommend applewood-smoked)
- 1 large onion, minced
- 3 garlic cloves, smashed
- 1/4 t nutmeg
- 1/4 t powdered ginger
- 1/4 t cloves
- 1 t sugar
- 1 c dry red wine
- 1 c beef stock
- 1 lb red new potatoes, halved and placed in a bowl of cold water
- 16-oz bag frozen chopped spinach, defrosted and squeezed dry
- 1/2 c dry currants
- 1/4 c toasted pine nuts
- 2 T capers
- 3 T minced parsley
- 1 T red wine vinegar
- salt and pepper
