Sauteed Brussels sprouts with poppy seeds

In a food processor fitted with the slicing disk, slice the Brussels sprouts
- 1 1/2 lbs Brussels sprouts, trimmed
- 3 T olive oil
- 1 large shallot, finely chopped
- Kosher salt and pepper
- 2 T white wine vinegar
- 1 T poppy seeds

- Alternative for increased protein:
- 1 15-ounce can cannellini or other white beans, rinsed and drained
- 1 15-ounce can red kidney beans
- 2 cups diced zucchini and/or summer squash (about 2 small)
- 1 1/2 cups diced celery
- 1/4 cup finely diced reduced fat feta cheese
- 1/3 cup chopped, well-drained, oil-packed sun-dried tomatoes (optional)
- 1 cup coarsely chopped fresh basil, plus whole basil leaves for garnish Salt & freshly ground pepper to taste (optional)
- 2 cups torn escarole or romaine lettuce 2 cups torn radicchio leaves
- 1 -2 Tbsp. Vinaigrette dressing
- VINAIGRETTE
- 1 medium clove garlic
- 1/4 teaspoon salt
- 5 tablespoons extra-virgin olive oil
- 6 tablespoons fresh orange juice, plus more to taste
- 1/4 cup white-wine vinegar or red-wine vinegar
- 1 tablespoon Dijon mustard
- Add baked tofu

Triple Ruby Relish

In a large bowl combine strawberries, watermelon, and radishes
- 16 ounces strawberries, hulled and chopped
- 1/2 cup chopped watermelon
- 6 radishes, cut into strips
- 3 tablespoons white balsamic vinegar
- 1 tablespoons snipped fresh mint
Spicy Parmesan Collard Chips

Ensure that 2 racks are in place in oven, in middle and bottom third positions
- 1 head collard greens, rinsed and dried (about 12 oz)
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1/4 cup grated Parmesan cheese
- 1/4 tsp cayenne pepper
- 1/4 tsp sea salt
Whole Wheat Pasta with Tomatoes and Veggies

Cook pasta according to package directions, reserving 1/4 cup pasta cooking water
- 4 ounces whole wheat pasta
- 1/4 cup chopped onion
- 1/4 cup water or low-sodium vegetable broth
- 1/4 cup chopped carrots
- 1/4 cup chopped celery
- 3 cloves garlic, minced
- 1 cup finely chopped Swiss chard or kale
- 1 (14.5 ounce) can no-salt-added diced tomatoes, about 1 3/4 cups
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes
- Nutritional yeast (optional)
Gazpacho Chicken Salad

Slice cucumber into long strips with a peeler; squeeze out excess water
- 1 cucumber
- 4 c shredded chicken
- 2 chopped peaches
- 2 c halved cherry tomatoes
- 1 sliced yellow bell pepper
- 1/2 c diced red onion
- 2 c cubed day-old baguette
- 1 c feta
- 1/3 c EVOO
- 2/3 c fresh basil
- 2 T red wine vinegar
- 1/4 t salt
- 1/4 t pepper

Chocolate Raspberry Macaroon Tart

Preheat oven to 350ºF
- CRUST
- 1 cup rolled oats
- 1/2 cup plus 2 tbsp shredded unsweetened coconut
- 5 tbsp unsweetened cocoa powder
- 1/8 tsp powdered stevia
- 1/4 tsp fine sea salt
- 2 1/2 tbsp virgin coconut oil, melted
- 2 1/2 tbsp unsweetened applesauce
- FILLING
- 1 cup shredded unsweetened coconut
- 1/8 tsp powdered stevia
- 2 egg whites
- 6 oz raspberries, halved
- CHOCOLATE DRIZZLE
- 5 tbsp unsweetened plain almond milk
- 1 1/2 oz dark chocolate (70% cocoa or greater), finely chopped
- 1/4 tsp pure vanilla extract
Mediterranean Turkey Burgers

In a large bowl, mix turkey with next five ingredients (thru black pepper)
- 1 lb lean ground turkey
- 1/2 c chopped feta cheese
- 1/2 c chopped roasted red pepper
- 1/3 c chopped fresh basil
- 1/3 c chopped Kalamata olives
- 1/4 t black pepper
- 1/2 c oil-packed sun-dried tomatoes
- 2 T red-wine vinegar
- 2 t fresh thyme
- 1 garlic clove
- 1/2 t smoked paprika
- 1/4 t each salt and pepper
- 4 whole wheat hamburger buns.
Crispy Sweet Potato Fries

- 2 sweet potatoes, trimmed and sliced to french fry size
- 1 egg white for 2 potatoes
