Watermelon Gazpacho

  • 3 c diced and seeded watermelon
  • 1 c diced seedless cucumber
  • 1 c chopped romaine lettuce
  • 1/2 t white balsamic vinegar
  • Crumbled goat cheese
  • Chopped basil


Servings 4


Step 1

Make gazpacho by combining watermelon thru vinegar along with salt and pepper to taste in a blender. Puree until smooth and divide evenly among four bowls. Garnish with crumbled goat cheese and 1 t chopped basil.
