Oat Bran Muffins with Berries or raisins

Whisk together dry ingredients
- 2 cups oat bran
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 cup nonfat or low fat vanilla yogurt/or 1 6 ounce container
- 1/2 cup orange juice
- 1/2 cup egg substitute or 2 eggs
- zest from 1 orange
- 2 Tablespoons oil
- 3/4 cup blueberries or dried cranberries or raisins----try fresh cranberries?
Low Carb Teriyaki Sauce

- 1/2 cup soy sauce (I used Kikkoman)
- 1/2 cup water
- 1/4 cup Splenda or sugar (or less, depending on how sweet you like it, use Splenda for the South Beach Diet)
- 1 tablespoon brown sugar (optional)
- 1 tablespoon ginger puree or fresh grated ginger root
- 1 tablespoon garlic puree or fresh garlic, finely diced

Hearts Of Palm Wrapped in Ham and Cream Cheese

- 3/4 pounds Deli Ham, Sliced Medium (thin Enough To Wrap, But Thick Enough To Really Taste)
- 1 container (12 Oz. Size) Whipped Cream Cheese (makes It Easier To Spread, But Regular Works Fine As Well, Softened)
- 1 can (about 14 Oz. Size) Hearts Of Palm

- 1 4-ounce package German Sweet Chocolate 2 eggs
- 3 Tablespoons butter 3/4cup sugar
- 1 3 ounce package cream cheese 1/2 teaspoon baking powder
- 2 Tablespoons butter 1/2 cup unfitted flour
- 1/4 cup sugar 1/4teaspoon salt
- 1 egg 1 teaspoon vanilla
- 1 Tablespoon flour
- 1/2 teaspoon vanilla 1 teaspoon almond extract
- 1/2 cup chopped nuts
- Prepared cream cheese frosting
Super Sloppy Joes

Directions Heat a large skillet over medium high heat
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered

Spaghetti alla Carbonara

Cook the spaghetti in a large pot of boiling salted water until it is tender but still firm
- 3/4 pound spaghetti
- 1/2 cup chicken broth
- 2 Tablespoons dry white wine
- 1 garlic clove, minced
- 8 Tablespoons butter
- 4 slices bacon, cooked and crumbled
- salt and freshly ground pepper to taste
- 1/4 cup freshly grated Parmesan cheese
- 2 egg yolks
Veggie Noodle Ham Casserole Recipe

Cook pasta according to package directions; drain
- 1 package (12 ounces) wide egg noodles
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
- 1-1/2 cups milk
- 2 cups frozen corn, thawed
- 1-1/2 cups frozen California-blend vegetables, thawed
- 1-1/2 cups cubed fully cooked ham
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1 cup (4 ounces) shredded cheddar cheese, divided
