An easy, delicious salad that uses dried cranberries (Craisins)

  • 1 cup low-fat mayonnaise (plain yogurt is another possibility although I haven't tried it) or 1 cup salad dressing (plain yogurt is another possibility although I haven't tried it)

  • 1 1/2 teaspoons curry powder (or more to taste)
  • 4 1/2 cups cooked chicken , chopped
  • 2 chopped apples or 2 granny smith apples
  • 1 cup dried sweetened cranberries (Craisins)
  • 1 cup thinly sliced celery
  • 1/2 cup chopped pecans
  • 1/4 cup chopped scallion

Mix together crust ingredients and pat into 8x8” pan

  • 4 Tablespoons melted butter
  • 2 Tablespoons white sugar
  • 2 Tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 pound softened cream cheese
  • 1/2 cup sugar
  • 4 eggs
  • 2 cups sour cream 1 1/4 cup sugar (too much) 1 teaspoon vanilla
  • Mix above and pour over cheesecake. Bake at 350 for another 25 minutes. Best if refrigerated overnight or at least several hours.

  • 5 cups potatoes, sliced 1/4 inch thick (I use red and I don't peel them too much)

  • 2 chicken bouillon cubes, crumbled or Better than Bouillon equivalent.
  • 1/2 cup chopped green onions
  • 1 Tablespoon butter
  • 1 Tablespoon flour
  • 1/4 teaspoon dill weed
  • Dash white pepper
  • 1/4 cup milk (If you substitute cream you don't need to thicken with flour)
  • 1 cup sour cream (Use Daisy all cream sour cream for Sondra)
  • 1/2 teaspoon prepared mustard
  • 1 cup pitted ripe olives, drained and quartered
  • 1/2 cup grated cheddar cheese
  • Paprika (I don't believe I ever noticed that it had paprika in it before)
