Oriental Chicken Salad Mom

Crush noodles slightly; place in colander
- 1 3 ounce package oriental noodles with chicken flavoring
- 4 cups shredded cabbage
- 4 green onions sliced (14 cup)
- 2 Tablespoons sesame seeds
- 3 Tablespoons vinegar
- 2 Tablespoons sugar
- 2 Tablespoons salad oil
- 1/2 teaspoon ground white pepper
- 1/4 teaspoon salt
- 1/2 cup slivered almonds, toasted

- 2 strips of thick bacon, chopped fine (or see note)
- 1 small onion, minced
- 1 clove garlic, minced or 1/4 teaspoon garlic powder
- 1 small can (6 oz) tomato paste
- 1 can (12 oz) diet (sugar-free) cola - Splenda-sweetened preferred
- 1/4 cup low carb (sugar-free) catsup, (or see note)
- 3 T mustard
- 1 Tablespoon Worcestershire sauce
- 1 pinch ground cloves
- Hot sauce to taste
Chile Cheese Cornbread in a Jiffy

A great side dish to chili or stews
- 2 (8 1/2 ounce) boxes Jiffy corn muffin mix
- 2 large eggs
- 2/3 cup milk
- 1/2 cup sour cream
- 1 (4 ounce) can diced mild green chilies (you can substitute chopped jalepenos for an extra kick)
- 1 cup cheddar cheese, shredded
Cream Cheese Raspberry Mold

Dissolve jello in water and set aside
- 1 large raspberry jello -can use diet
- 8 ounces cream cheese
- 1 1/2 cup boiling water
- 4 Tablespoons sugar--3 packets Splenda for Low Carb
- 1 cup chopped walnuts or pecans
- 1 package frozen raspberries (defrost, drain, reserve juice)
- when making for low carb sweeten the raspberries with Splenda see below
Mediterranean Four Bean Salad

Combine first 9 ingredients in large bowl; toss gently,
- 1 cup finely chopped parsley
- 1 cup thinly sliced green onions
- 2 Tablespoons finely chopped fresh mint
- 1/2 cup finely chopped red onion
- 1 can each (15 ounce) Kidney beans, pinot beans, and black beans- drained and rinsed
- 2 cloves garlic minced
- 1/3 cup fresh lemon juice
- 1 1/2 Tablespoons olive oil (I omit)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup diced Roma tomatoes
Fresh Broccoli Salad

Peel the tough outer skin from the broccoli stalk
- 1 head broccoli (1 1/4 pounds)
- 1/2 cup chopped red onion
- 1/2 cup raisins
- 1/2 cup salted rosted sunflower seeds or less
- Dressing
- 1 cup nonfat or reduced fat mayonnaise (1/4 cup nonfat yogurt and 1/2 cup mayo)
- 2 Tablespoons sugar (Can decrease because raisins sweeten salad after standing)
- 1 Tablespoon Cider Vinegar
Sweet and Sour Pork

In large skillet brown the pork really well in hot oil
- 1 1/2 pounds lean pork shoulder cut in 2.5" strips
- 1/4 cup vegetable oil
- 1/2 cup water
- 1/4 cup firmly packed brown sugar
- 2 Tablespoons cornstarch
- 1/2 teaspoon salt
- 1/4 cup cider vinegar
- 3 Tablespoons Soy Sauce
- 1 16 ounce can pineapple.- save juice
- 2 medium carrots thinly sliced
- 1 small green pepper in strips
- 1/2 cup thin sliced yellow onion
- Hot cooked rice

In a large saucepan, saute the onion, celery, green pepper, turnip and carrot in oil for 7 minutes
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped green pepper
- 1/2 cup chopped peeled turnip
- 1/3 cup sliced fresh carrot
- 1 tablespoon olive oil
- 3 cups reduced-sodium chicken broth
- 1 can (14-1/2 ounces) stewed tomatoes, cut up
- 1-1/2 teaspoons dried thyme
- 1 bay leaf
- 1 cup coarsely chopped green cabbage
- 1 cup cut fresh green beans (2-inch pieces)
- 1-1/2 cups cubed cooked turkey breast
- 1 tablespoon cider vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
