CORN CASSEROLE

Mix all ingredients together - adding corn last
- 2 pints of corn - cob, crushed, or creamed
- 2 tablespoons flour
- 2 tablespoons sugar
- 2 eggs - beaten well
- 1 teaspoon baking powder
- 1/4 cup milk or half and half
- salt
- pepper
CRANBERRY AMARETTO SAUCE

- 1/2 cup water
- 2 cups sugar
- 1 12-ounce bag fresh cranberries
- 1/3 cup orange marmalade (Smuckers works best)
- 2 teaspooons lemon juice
- 1/3 cup Amaretto
- 1/3 cup toasted slivered almonds
TACO DIP

Combine cream cheese, sour cream, chili powder, cumin, and red pepper
- 12 ounces cream cheese - softened
- 1/2 cup dairy sour cream
- 2 teaspoon chili powder
- 1 1/2 teaspoons ground cumin
- 1/8 teaspoon ground red pepper
- 1/2 cup salsa
- 2 cups shredded lettuce
- 1 cup cheddar cheese
- 1 cup Monterey Jack cheese
- 1/2 cup plum tomatoes - diced
- 1/3 cup green onions - sliced
- 1/4 cup rip olives - sliced
- 1/4 cup pimiento-stuffed green olives

Instant Pot Vegetarian Chili Recipe

This Instant Pot Vegetarian Chili is SO quick and easy to make and full of vegetables, beans, and quinoa! Healthy
- 2 green bell peppers diced
- 1/2 yellow onion diced
- 1/2 jalapeno minced, seeded for less spice, although level varies from pepper to pepper
- 4 cloves garlic minced or pressed
- 1 tablespoon chili powder
- 1/2 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 2 teaspoons salt
- 2 1/2 cups vegetable broth
- 1 (8 oz) can tomato sauce
- 1/2 cup quinoa
- 1 (15 oz) can black beans drained and rinsed
- 1 (15 oz) can kidney beans drained and rinsed
- 1 (15 oz) can corn drained and rinsed
- avocado, cilantro, green onions, lime juice, sour cream, cheese, tortilla chips optional for serving
TACO SOUP

- 2 pounds ground beef
- 2 cups diced onions
- 2 15 1/2 ounce cans pinto beans
- 1 15 1/2 ounce can pink kidney beans
- 1 15 1/4 ounce can whole kernal corn (drained)
- 3 14 1/2 ounce cans diced tomatoes (plain or with chilis or a combination any spiced variety)
- 1 1 1/4 ounce package taco seasoning
- 1 1 ounce package ranch dressing
- corn chips, sour cream, shredded cheese for garnish
CHOCOLATE POT de CREME
