BANANA SPLIT PIE

Nice celebration option when attendees don't like cake or pie
- 1 1/4 cups cold milk
- 12 ounces frozen whipped topping, thawed & divided
- 6 ounce box instant vanilla pudding mix
- 2 bananas, cut across into 1/4 inch thick slices - to prevent banana slices from discoloring, reserve 3 tablespoons pineapple juice from can. Toss banana slices with pineapple juice.
- 1 pan prepared chocolate cookie crumb pie crust
- 11 3/4 ounce hot fudge sauce
- 2 tablespoons dark rum or water
- 20 ounce can pineapple tidbits, drained
- 12 maraschino cherries with stems, well drained
- 3 tablespoons walnut pieces
CURRANT BISCUITS

- 6 cups flour
- 2 cups sugar
- 6 teaspoons baking powder
- pinch of salt
- 2 sticks butter (melted)
- 1 box currants
- 2 cups milk
MERRY CHERRY DESSERT

Reserve 1/3 cup cherry pie filling for garnish
- 1 can cherry pie filling - divided (21 ounce)
- 1 1/2 cups boiling water
- 1 package JELL-O Cherry Flavor Gelatin (6 ounce)
- 1 1/2 cups cold water
- 4 cups angel food cake cubes
- 2 packages JELL-O Vanilla Flavor Instant Pudding (3.4 ounce)
- 3 cups cold milk
- 1 tub Cool Whip Whipped Topping - thawed and divided
PEAR CREAM BREAKFAST CAKE

Perfect for brunch or as a dessert
- 1 29-ounce can pear halves in heavy syrup
- 1 8-ounce cream cheese, softened
- 1/4 cup apricot preserves
- 2 tablespoons butter
- 1 9-ounce yellow cake mix
- 2 tablespoons oil
- 1 egg
- 1 teaspoon ground ginger
EASY BEEF ROAST

Brown roast on all sides in dutch oven
- 1 boneless chuck roast
- 1 bottle of dark beer
Holiday Brisket

A savory, aromatic, slowly cooked brisket with tomatoes, onions, garlic, brown sugar, and a touch of vinegar
- 5-7 lb brisket, first or second cut (do not trim fat - especially if it's grass fed)
- 1/4 cup extra virgin olive oil, divided
- 2 large brown onions, peeled and sliced
- 1 lb carrots, peeled and sliced
- 1 lb celery, peeled and sliced
- 28 oz tomatoes - whole, diced, or crushed (1 large can)
- 10 peeled whole garlic cloves
- 1/2 cup brown sugar
- 1/4 cup vinegar (I like apple cider vinegar, but white vinegar works too)
- 2 cups beef or chicken broth, divided
- Salt and pepper
CARAMEL APPLE CHEESECAKE

- 1 21-ounce can apple pie filling
- 1 9-inch graham cracker crust
- 2 8-ounce packages cream cheese, softened
- 1/2 cup sugar
- 1/4 teaspoon vanilla extract
- 2 eggs
- 1/4 cup caramel topping
- 12 pecan halves, plus 2 tablespoons chopped pecans
MEXICAN DIP

Shred pepperjack cheese. Layer cream cheese, hormel chili, pepperjack cheese, and olives
- 1 package cream cheese
- 1 can Hormel chili
- 1 package pepperjack cheese
- 1 can sliced olives
CHOCOLATE COVERED PINK PEPPERMINT PATTIES

In the bowl of a stand mixer, beat together sugar and butter
- 2 cups powdered sugar
- 1 1/2 tablespoons soft, unsalted butter
- 1/4 teaspoon corn or vegetable oil
- 1/4 teaspoon vanilla extract
- 2 tablespoons half and half
- 2-4 drops peppermint extract
- 1 drop red food coloring
- 1 cup semi-sweet chocolate baking chips
SALSA CORN CHOWDER SOUP

Great for warming up a crowd on a cold day because you can leave it on the burner for everyone to self-serve
- 1 1/2 cups chopped onion
- 2 tablesppons butter or margarine
- 1 tablespoon flour
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 16 ounce package of sweet corn (thawed)
- 2 cups salsa (I use mild)
- 1 13 3/4 ounce can chicken broth
- 1 4 ounce jar of pimento, drained (optional)
- 1 8 ounce container of soft cream cheese
- 1 cup milk
- For a hearty entree, add chopped cooked chicken or ham.
