Hummus (several types)

A variety of different hummus recipes - classic, cucumber dill, no fat, chocolate, artichoke and garlic
- Classic Hummus - 1 clove garlic, 15 oz can drained and rinsed chickpeas, 1/4 tsp salt, 2 T. each lemon juice tahini, olive oil and water.
- Cucumber Dill Hummus - ingredients for classic hummus minus the water; 1/2 peeled, seeded and chopped cucumber, 1/2 cup fresh dill (or 1 T dried dill).
- Zero Fat Hummus - ingredients for classic hummus minus thanini and olive oil. Add 3 T. each water and lemon juice, plus 1/4 tsp salt.
- Chocolate Hummus - ingredients for classic hummus minus garlic and lemon juice. Add 1 T. honey, 4 T. unsweetened cocoa powder, 5 T. sugar, 3 T. water and 1/4 tsp extra salt.
- Artichoke and Garlic Hummus - add 14 oz can of drained marinated artichoke hearts and 3 additional garlic cloves to original recipe.

- 4 ounces semisweet or bittersweet chocolate, chopped
- 1 cup hot strong coffee
- 3/4 cup buttermilk
- 1 1/2 teaspoons vanilla extract

- 1 teaspoon baking powder
- 1 teaspoon baking soda

1. Heat oven to 350 degree F
- Nonstick cooking spray
- 1/2 of a 16-oz. pkg. vermicelli pasta, broken in half
- 1 16 ounce jar (1-2/3 cups) mild chunky salsa (choose a brand with little to no added salt)
- 2 cups cubed cooked chicken breasts
- 1 cup shredded Mexican cheese blend
- 1 tablespoon chopped fresh cilantro

1. Bring 4 quarts of lightly salted water to a boil in a large saucepan
- 2 lb Brussels sprouts
- 6 slices thick-cut turkey bacon (6 oz), diced
- 1 Tbsp fresh thyme leaves
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper

1. Preheat oven to 450. Line large rimmed baking sheet with nonstick foil
- 20oz pkg peeled cut up butternut squash, cut into 1 inch cubes
- 2 onions, chopped
- 2 carrots, chopped
- 2 garlic cloves
- 2 tsp olive oil
- 2 32oz cartons veg broth
- 29 oz can cannelini beans, rinsed and drained
- 1 lg fresh sage sprig
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 14.5 oz can fire roasted diced tomatoes, drained
- 1/4 c grated pecorino cheese
- 4 fresh sage leaves for garnish
Tortellini Soup

1. Bring chicken broth to a boil
- 6 cups no salt added chicken broth
- 1 package 7-8 ounces dried cheese filled tortellini
- 1 - 16 ounces package (4 cups) frozen broccoli, cauliflower, and carrots or other veggie melody
- Freshly ground black pepper
- Parmesan cheese
Pesto & Tomato Crostini

- 1 (8 ounce) loaf Safeway SELECT(TM) Artisan Baguette
- 3 tablespoons O Organics(TM) Extra Virgin Olive Oil
- 1 (7 ounce) container pesto sauce
- 8 small plum tomatoes, thinly sliced
- shredded Parmesan cheese
Spinach Strawberry Salad

Spinach and strawberries what an odd combination for a recipe
- 1 lb spinach (I pinch off the larger stems)
- 1 pint strawberry , sliced set a few aside (egg slicer works wonders)
- 1/2 cup pecans , toasted
- 1 ⁄3; cup roland raspberry red wine vinegar
- 1/2 cup sugar or 1/2 cup sugar substitute
- 1 teaspoon dry mustard
- 3/4 cup vegetable oil
- 2 teaspoons poppy seeds
