Chicken Fiesta Salad

Rub chicken evenly with 1/2 the fajita seasoning
- 2 skinless, boneless chicken breast halves
- 1 (1.27 ounce) packet dry fajita seasoning, divided
- 1 tablespoon vegetable oil
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can Mexican-style corn
- 1/2 cup salsa
- 1 (10 ounce) package mixed salad greens
- 1 onion, chopped
- 1 tomato, cut into wedges
Sweet & Sour Meatballs

- 1 lb ground turkey breast
- 2 green onions, chopped (green only)
- 1 1/2 Tbs. fresh ginger, grated
- 1/2 tsp. black pepper
- 2 egg whites
- 8 oz. can pineapple chunks in natural juices (no sugar added)
- 1/4 cup Splenda
- 1 1/2 Tbs. cornstarch (optional)
- 1/4 cup white wine vinegar
- 1 green bell pepper, cut in very thin strips

Place an oven rack in the center of the oven
- 1 large prebaked pizza crust
- 1 tablespoon olive oil, or as needed
- 1 teaspoon dried Italian herb mix, or to taste
- 1 teaspoon dried parsley flakes
- 1 cup grated Parmesan cheese, divided
- 1 (8 ounce) package shredded mozzarella cheese, divided
- 1 (15 ounce) can pineapple chunks in juice, drained
- 1/2 cup chopped jalapeno pepper

- 2 green onions, chopped
- 1/4 cup bell peppers, chopped
- 2 whole garlic cloves, minced
- 2 oz. of chicken breast, cut into chunks
- 1/2 cup of broccoli spears
- 1/2 cup of cauliflower, cut into chunks
- 1/4 cup bean sprouts
- 1/2 cup brown rice, cooked
- 1/2 cup of carrot slices (optional)
- 3 Tbs. low sodium soy sauce

- 4 boneless, skinless chicken breast halves
- 1 teaspoon lemon pepper
- 1 teaspoon salt
- 1 teaspoon dried dill weed
- 1 teaspoon garlic powder
- 3 tablespoons butter
- 1/2 cup whipping cream
- 2 tablespoons capers, drained and rinsed

- 1 tablespoon butter
- 1/2 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1 (4 ounce) can diced green chiles
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 cups cubed cooked chicken breast meat
- 1 cup shredded Cheddar cheese, divided
- 6 (12 inch) flour tortillas
- 1/4 cup milk
Makeover Pizza

Lunch, Afternoon Snack, Dinner (2oz - Protein B, 1/2 cup - Carb B)
- Crust:
- 1/2 cup oatmeal, uncooked and ground in a blender
- 2 tsp. your favorite seasoing (Italian)
- 3 tsp. garlic powder
- 1 1/2 tsp. nsa baking powder
- 2-3 tsp. water
- Sauce:
- 1 small can nsa low sodium tomato sauce
- 1-2 tsp. minced garlic
- Italian seasonings to taste ( or substitute oregano, basil, and thyme)
- Garlic powder to taste
- 2 tsp balsamic vinegar
- Sugar substitute to taste
- Toppings:
- 4 oz. ground turkey or slicked chicken breast
- Veggies: tomatoes, onions, peppers, broccoli, cauliflower, zucchini, etc.

In a skillet, saute celery, onion and green pepper in butter
- TOPPING:
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 2 tablespoons chopped green pepper
- 2 tablespoons butter or margarine
- 2 cups cubed, cooked chicken
- 1 (4 ounce) can sliced mushrooms, drained
- 6 pimento-stuffed green olives, sliced
- 1 (10.75 ounce) can condensed cream of chicken soup, undiluted
- 1 cup milk
- 1 (8 ounce) package wide egg noodles, cooked and drained
- 1/2 cup cornflake crumbs
- 1/4 cup shredded Cheddar cheese
- 2 tablespoons butter or margarine, melted
