Four Layer Delight

Mix together crust ingredients and press in 9x13 pan
- Layer 2:
- Crust: Layer 1
- 1 c. flour
- 1/2 c. walnuts (chopped finely)
- 1/2 c butter (melted0
- 8 oz. cream cheese
- 1 c. powdered sugar
- 1 c. cool whip
- Layer 3:
- 2 sm. packages instant lemon or chocolate pudding
- 3 c. milk
Bruscetta

HEAT broiler. BROIL bread slices 2 to 3 min
- 1 loaf (1 lb.) French bread, cut into 36 slices
- 2 tablespoon oil
- 2 1/2 cups plum tomatoes, chopped (7)
- 1 pkg. (4 oz.) ATHENOS Crumbled Feta Cheese with Basil & Tomato, finely chopped
- 1/2 cup finely chopped red onions
- 3 tablespoons chopped fresh parsley
- 1 tablespoon chopped black olives
- 1 teaspoon pepper
Crab Dip

Mix all ingredients and serve with crakers
- 1 large cream cheese
- 1 can crab meat
- 1/2 tsp lemon juice
- 1/4 tsp hoseradish sauce
- 1/4 c mixture of chili sauce and ketchup
Blueberry Cheesecake

Mix first 4 ingredients to make the crust and press into a pan
- 1 box coconut bars (ground)
- 1 stick oleo
- 2 T flour
- 2 T, sugar
- 4 eggs
- 1 c. sugar
- 2 8 oz. cream cheese
- 1 4 oz. cream cheese
Apple Pudding

Add dry ingredients to the egg mixture
- Mix together:
- 1 c sugar
- 1/2 c crisco
- 1 egg
- Sift together:
- 1 1/4 c flour
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp baking soda
Cream Cheese and Herb Cucumber

Remove 2 T of carrots and set aside
- 1/2 c. shredded carrots
- 1/2 c. chive and onion cream cheese spread
- 2 medium cucumbers
Tangy Parmesan-Basil Dip

In food processor, puree cream cheese, mayonnaise, seasoning, milk and lemon juice until smooth
- 1 package cream cheese (room temperature)
- 1/2 c. mayonnaise
- 2 T Parmesan and herb seasoning (like Land-O-Lakes)
- 2 T milk
- 1 tsp. lemon juice
- 1/4 c chopped basil
- 2 T minced scallions
Strawberry Pie

Heat above ingredients until thick
- 1 c. sugar
- 1 tsp. lemon juice
- 3/4 c. crushed strawberries w/juice
- 3 T corn starch
- 1/4 c. cold water
Zesty Maryland Crab Dip

In processor puree cream cheese, cottage cheese, seafood seasoning, ketchup, and scallions until smooth
- 1 c cream cheese
- 3/4 c cottage cheese
- 2-3 tsp seafood seasoning blend
- 2-3 T ketchup or chili sauce
- 3 T minced scallions (white part only)
- 1 can crab meat (drained)
- 3 dashes hot sauce (optional)
Black Bean Salad

In small bowl combine peppers, onion, corn, garlic and cilantro
- 1 red pepper (diced)
- 1 yellow pepper (diced)
- 1 green pepper (diced)1/2 c.
- 1/2 c. red onion (diced)
- 1 can corn (drained)
- 1 garlic clove (minced)
- 1 tsp. cilantro
- 1/4 c. olive oil
- 4 T red wine vinegar
- 1 can black beans (drained & rinsed)
- 1 tsp. lime juice
- salt and pepper to taste
- tortilla chips
