Make the Piecrust Dough: In a large mixing bowl, whisk together the flour and salt
- 1 1/4 cups flour
- 1/4 teaspoon salt
- 4 tablespoons cold unsalted butter
- 3 tablespoons solid vegetable shortening
- 3 tablespoons cold water
- 4 tablespoons butter
- 1 medium-size onion, chopped
- 1 stalk celery, chopped
- 1/4 cup flour
- 1 1/4 cups chicken or turkey stock
- 1 1/4 cups milk
- 1 teaspoon crumbled or powdered dried sage
