Pineapple on a Stick | Better Batter Gluten Free Flour

Heat your oil in a fryer or very heavy pan to 375 degrees
- skewers
- 1 fresh pineapple, cut into 1-2 inch thick ‘spears’ (should make about 12)
- 1 tsp – 1 tbsp flavoring extract (we favor vanilla, rum, coconut, or pineapple) PLUS 1 tbsp water, optional
- Better Batter Gluten Free Flour, for coating the pineapple.
- 1 c Better Batter Gluten Free Yellow Cake Mix
- 1 c water
- at least 4 c oil for frying (a deep fryer works best) to a depth of at least 3 inches.

In a large plastic bag, combine flour, oregano, red pepper flakes and pepper

Bring a large pot of salted water to a boil
- 1 pound (16 oz) box of Safeway Kitchens Pasta Rotini (Elbow Macaroni, Penne and Mini Farfalle also work well)
- 3-4 cups grated cheddar cheese (you can use other semi-hard cheeses as well)
- 4 slices American cheese cut into pieces (you can find this in the Safeway Deli, as well as in the cheese section)
- 3 oz PHILADELPHIA Original Cream Cheese (not the spread, 3 oz is just shy of half an 8oz brick)
- 2 TBSP butter
- 1 1/2 - 2 cups half and half or milk (half and half will give a richer flavor)
- 1 tsp salt
- OPTIONAL MIX IN ITEMS
- A few drops of hot sauce
- A tablespoon Dijon mustard
- A teaspoon fresh black pepper

In a large bowl combine flour, sugar, salt and baking powder
- 1 1/2 cups all purpose flour
- 1 tbsp sugar
- 1/4 tsp salt
- 3 1/2 tsp baking powder (not soda!)
- 1 1/2 cups milk
- 1 egg (room temperature if possible)
- 2 tsp vanilla
- 3 tablespoons butter, melted and slightly cooled (I place mine in the fridge immediately after melting)
- Nutella, butter or syrup for topping.
