Homemade Panera Bread Ham and Swiss Soufflés

Bluebonnets & Brownies
- 4 eggs, 1 reserved
- 1 tablespoon milk or half and half
- 1 tablespoons heavy cream
- 1/4 cup shredded KerryGold Swiss cheese
- 1 tablespoon shredded Parmesan cheese, plus more for topping if desired
- 1/4 teaspoon salt
- black pepper to taste (optional)
- 2 thick slices deli ham, diced (I used Honey Roasted. You could also use quartered Canadian Bacon slices)
- 2 tablespoons fresh minced red pepper, if desired
- 1 8-ounce tube Pillsbury Crescent butter flake dough
- melted butter
Beef roast

Put the water in a measuring cup that is larger then the amount of water you are using
- 3 pound beef roast such as chuck roast 1 envelope of dry Italian salad dressing mix 1 envelope of dry ranch salad dressing mix 1 envelope of dry brown gravy mix 2 cups water
Taco Casserole aka Mexican Hotdish

Brown beef and then add onion and garlic
- 1 1/2-2 pounds of ground beef
- large onion, chopped
- 1 package of taco seasoning
- 2 T. ground cumin
- 4 cloves of garlic minced
- 1 can black beans, drained
- 1 cup of cooked rice
- 1 15 oz can of fire roasted tomatoes
- salt and pepper to taste (I always salt as I go)
- 1 jar of good salsa ( I used some homemade salsa canned from last year but use whatever you have)
- 3 cups of crushed tor-tilla chips
- 1 16 oz container of sour cream
- 4 chopped scallions
- 2 cups of cheddar cheese
- 1 can black olives, drained and chopped for garnish
- 4 T. chopped jalapeños (I didn’t use fresh but you could) for garnish
- Serve with chips and your favorite guacamole!
Crunchy Onion Potato Bake

- 2 2 1/2 Spoon half of potato mixture into dish. Sprinkle with 1/2 each of the cheese and onions. Top with remaining potatoes; sprinkle with remaining cheese and onions.

Instructions Beat yolks and sugar in stand mixer on medium high for 12 minutes or until white and thick
- 3 eggs, yolks and whites separated
- 1/2 cup caster sugar
- 1/2 tsp vanilla extract
- 8 oz / 250g mascarpone
- 1 1/4 cups hot espresso coffee - strong! (Note 1)
- 2 tbsp (or more!) of liquor of choice - I like Frangelico and Kailua
- 6.5 oz/200g lady fingers (24 - 30), pavesini or savoiardi biscuits (Note 2)

- 1/2 cup apple cider vinegar
