LION HOUSE ROLLS

In the bowl of an electric mixer, combine water and milk powder and stir until milk dissolves
- 2 T. active-dry yeast
- 2 c. warm water
- 1/4 c. sugar
- 1/3 c. butter-softened but not melted, or shortening
- 1 egg
- 2 teaspoons salt
- 2/3 c. nonfat dry milk (instant)
- 5-5 1/2 cups bread flour, for best results (I use 5. It's not necessary to add the entire amount of flour. Judge by the stickiness of the dough, not by the amount you've added)
PUMPKIN CUPCAKES WITH CREAM CHEESE FROSTING

Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy
- Frosting:
- 3/4 cup butter, soften
- 2 1/2 cups sugar
- 3 eggs
- 15 ounces solid pack pumpkin or fresh
- 2 1/2 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3 /4 teaspoon salt
- 1 /2 teaspoon baking soda
- 1 /2 teaspoon ground ginger
- 1 cup buttermilk
- 1 package cream cheese, soften (8 ounces)
- 1 /2 cup butter
- 4 cups confectioners sugar
- 2 teaspoons ground cinnamon
Oatmeal Banana Pecan Muffins

1. Preheat oven to 350 degrees
- 4 very ripe bananas (this is important; very ripe = sweet & moist)
- 1/2 cup canola or vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups plain flour
- 1 cup sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup oatmeal
- 1 cup chopped pecans or walnuts

Roasted Squash & Fennel with Thyme

Preheat oven to 450°F. Quarter squash lengthwise, then cut crosswise into 1-inch pieces
- 2 small summer squash (about 12 ounces)
- 1 1/2 cups sliced fennel bulb (about 1 small bulb), plus 1 tablespoon chopped fennel fronds, divided
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon chopped fresh thyme
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/4 cup thinly sliced garlic

- 16 oz box of macaroni
- 2 1/2 cups milk
- 12 oz can evaporated milk
- 8 oz cream cheese

1. In a large resealable plastic bag, combine the first six ingredients
- 3 tablespoons olive oil
- 1 tablespoon minced fresh rosemary
- 1 garlic clove, minced
- 1 teaspoon cornstarch
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 large sweet potatoes, peeled and cut into 1/4-inch julienned strips (about 2-1/4 pounds)

1. Beat the eggs and milk until light and foamy, about 3 minutes at high speed of a stand or hand mixer
- 2 large eggs
- 1 1/4 cups milk
- 3 tablespoons melted butter or vegetable oil
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 3/4 teaspoon salt
- 2 teaspoons baking powder
- 2 tablespoons sugar OR 1/4 cup malted milk powder
- Use 1 cup milk if you're baking under hot, humid conditions, or if you're going to let the batter rest longer than 15 minutes. Use up to 1 1/4 cups milk in cold, dry conditions.

Add the bacon and 1 tablespoon of olive oil to the Le Creuset oven over medium-low heat
- 3 slices (3/4 cup) smoked and cured bacon, halved lengthwise and then cut crosswise into 1/4-inch slices
- 3 tablespoons extra-virgin olive oil, divided, plus more for drizzling
- 2 large yellow onions, peeled and diced small
- 1/2 pound (2-3 links) fresh hot Italian sausage (pork or turkey), removed from casing
- 7 medium carrots, peeled and chopped
- 1 medium (2 cups) fennel bulb, diced small
- 1/4 teaspoon crushed red chili pepper (chili flakes), or to taste
- Freshly ground black pepper to taste
- 1 tablespoon tomato paste
- 7 large cloves garlic, peeled and chopped
- 1 (28-ounce) can diced tomatoes, undrained, fire-roasted, if possible
- 4 cups chicken stock
- 1 (16-ounce) can white beans (great northern beans), drained and rinsed
- kosher salt, to taste
