Tomato Basil Parmesan Soup

Add celery, carrots, onion and garlic to a food processor and pulse until finely minced (or mince by hand)
- 2 tablespoons olive oil
- 4 stalks celery
- 4 medium carrots
- 1/2 large onion
- 3 cloves garlic, peeled
- 1 tablespoon dried basil or 1/4 cup fresh basil, chopped
- 1 teaspoon dried oregano or 1 tablespoon fresh oregano
- 1 bay leaf
- 2 (14.5 oz.) cans fire roasted diced tomatoes with juice
- 4 cups chicken stock
- 4 tablespoons butter
- 1/4 cup flour
- 2 cups half and half, heavy cream or milk (or a combination)
- 1 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- Garnish
- freshly grated Parmesan cheese (optional)
Homemade Granola

- 2 C rolled oats
- 3/4 C raisins
- 1/2 C sliced almonds
- 1/2 C hulled pumpkin seeds
- 1/2 C agave syrup
- 2 T unsalted butter
- 1/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground allspice
Sauce for Barbecued Spare Ribs

After ribs are roasted at 450° for 1 hour add above and reduce oven to 350°
- 1/2 C vinegar
- 1 C butter
- 1/4 C brown sugar
- 1 C sauce (tomato or spaghetti)
- 1 T Worcestershire
- 1 T horseradish
- 1 tsp. mustard
Deluxe Sugar Cookies

Preheat oven to 375°. Mix powdered sugar, butter, egg, vanilla and almond extract
- 1 1/2 C powdered sugar
- 1 C butter, softened
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. almond extract
- 2 1/2 C flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
Icing

Mix until fluffy, adding water until spreading consistency
- 1 bag powdered sugar (about 4 C)
- 1 stick butter
- 1 tsp. vanilla
- 1/2 tsp. almond extract
Pumpkin Pie

Mix pumpkin with milk, sugar, beaten eggs, ginger, salt and cinnamon
- 2 C stewed & strained pumpkin
- 2 C rich milk or cream
- 1/4 tsp. ginger
- 3/4 C brown OR granulated sugar
- 2 eggs
- 1/2 tsp. salt
- 1 tsp. cinnamon
- Pie crust
Broccoli Salad

- 2 bunches broccoli,chopped
- 3-4 pieces bacon, cooked & crumbled
- 1/2 C shredded cheddar
- 1/2 red onion, diced
- raisins
- sunflower seeds
