Turkish - Apple Pie

Combine all the crust ingredients in a large bowl and divide in two
- Dough:
- 1/2 cup yogurt
- 1/2 cup sunflower oil
- 125 gr (1 stick) butter, unsalted, room temperature
- 3/4 cup icing sugar
- 1 tsp baking powder
- 2 3/4 cup (350 gr) all purpose flour
- Filling:
- 4 Granny Smith apples, peeled, grated
- 4 tbsp sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/3 cup walnuts, crumbled
- 23 cm (9 inch) pie plate, oiled
Greece - Meatloaf w/Kalamata Olives & Feta

For healthier version, I used Ground Turkey rather than beef, lamb or pork
- Nonstick cooking spray, for spraying pan
- 8 ounces ground beef
- 8 ounces ground lamb
- 8 ounces ground pork
- 1/2 cup pitted kalamata olives, finely chopped
- 1/2 cup finely diced white onions (about 1 small)
- 1/2 cup coarsely crushed saltines (8 to 10 crackers)
- 1/2 cup whole-milk Greek yogurt
- 2 tablespoons finely minced fresh mint
- 2 tablespoons finely minced fresh oregano
- 1 teaspoon ground cumin
- 3 cloves garlic, minced
- 1 large egg
- 1 teaspoon hot sauce, such as Tabasco
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1/2 cup crumbled feta

- 4 tablespoons unsalted butter
- 1/4 cup vegetable oil

In a heavy Dutch oven or stockpot, fry the bacon over moderate heat, stirring frequently, until it starts to brown
- 2 strips bacon, cut into 1/2-inch wide pieces
- 1 medium onion, chopped
- 4 Poblano chiles, roasted, seeded, peeled and diced
- 2 teaspoons salt
- 1 teaspoon fresh black pepper
- 3 garlic cloves, minced
- 1 quart chicken stock
- 6 medium Yukon Gold potatoes or 8-10 small red new potatoes, unpeeled, chopped
- 1 cup Crema, Creme Fraiche or sour cream
- 1/2 cup grated Anejo cheese (optional)

- 4 tablespoons cold unsalted butter
- 1 tablespoon olive oil

- 1/3 cup dry white wine
- 1 teaspoon finely grated lemon zest

- Season shrimp:
- 1 lb Large Raw shrimp, peeled and de-veined
- 1/2 tsp Black pepper
- 1/2 tsp Salt
- 2 tsp Curry powder
- Curry sauce:
- 1/2 Red bell pepper, julienned
- 1 Small onion, chopped
- 3 Cloves garlic, minced
- 1 Tomato, seeded and diced
- 1 Scotch bonnet pepper
- 2 Tbsp cooking oil
- 1 Sprig fresh thyme
- 1/2 tsp Salt
- 2 Tbsp Coconut milk
- 1 Tbsp Curry powder
- 1/2 tsp Hot pepper sauce
- 1 Tbsp cornstarch
- 1 cup Water
Dessert - Brownie Tart

Preheat the oven to 350 degrees

- 6 tablespoons (3/4 stick) unsalted butter
- 3 cups (20 ounces) semisweet chocolate chips
- 3 extra-large eggs
- 1 cup sugar
- 1 tablespoon instant coffee granules
- 1/2 teaspoon pure vanilla extract
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon kosher salt
German - Cucumber Dill Salad (Gurkansalat)
