- Crust
- 1 1/2 cups Round Table Pastry Flour or King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt
- 1/4 cup vegetable shortening
- 1/4 cup (1/2 stick) cold unsalted butter
- 1/4 cup plus 1 to 2 tablespoons ice water
- Filling
- 1/2 cup chopped pecans
- 1/2 teaspoon salt
- 3 large eggs
- 1/2 cup dark corn syrup
- 1/2 cup light corn syrup
- 1/4 cup sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1 teaspoon vanilla
- 1 cup pecan halves
Chicken with Mustard Mascarpone Marsala Sauce

Sprinkle the chicken with salt and pepper
- 1 1/2 pounds boneless skinless chicken breasts, each breast cut crosswise into 3 pieces
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 5 tablespoons butter, divided
- 3/4 cup chopped onion
- 1 pound cremini mushrooms, sliced
- 2 tablespoons minced garlic
- 1 cup dry Marsala wine
- 1 cup (8 ounces) mascarpone cheese
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped fresh Italian parsley leaves, plus whole sprigs, for garnish
- 12 ounces dried fettuccine
Oyster Gratin with Horseradish and Parmesan

1. Melt the butter in a large saucepan over medium heat
- 4 tablespoons butter
- 1/4 cup flour
- 1/2 medium onion, sliced
- 1 clove garlic, crushed
- 2 cups milk
- 1 clove
- 1 bay leaf
- 1/2 cup prepared horseradish
- Salt
- 3 dozen shucked oysters, drained, patted dry
- Freshly ground black pepper
- 1/3 cup dry bread crumbs
- 1/3 cup extra-virgin olive oil
- 1/3 cup freshly grated Parmesan cheese
- 1 teaspoon crushed red pepper flakes
Sangria - ATK

- 2 large juice oranges, washed; one orange sliced; remaining orange juiced
- 1 large lemon, washed and sliced
- 1/4 cup granulated sugar
- 1/4 cup Triple Sec
- 1 bottle inexpensive, fruity, medium-bodied red wine (750 milliliters), chilled

Makes one 9-inch pie If candied yams are unavailable, regular canned yams can be substituted
- Crust
- 1 1/4 cups unbleached all-purpose flour (6 1/4 ounces)
- 1/2 teaspoon table salt
- 1 tablespoon sugar
- 6 tablespoons (3/4 stick) cold unsalted butter, cut into 1/4-inch slices
- 1/4 cup vegetable shortening, cold, cut into two pieces
- 2 tablespoons vodka, cold (see note)
- 2 tablespoons cold water
- Filling
- 1 cup heavy cream
- 1 cup whole milk
- 3 large eggs plus 2 large yolks
- 1 teaspoon vanilla extract
- 1 (15-ounce) can pumpkin puree
- 1 cup drained candied yams from 15-ounce can (see note)
- 3/4 cup sugar
- 1/4 cup maple syrup
- 2 teaspoons grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon table salt
Spanish Style Paella

In a large paella pan over medium heat, add olive oil and then fresh sausage
- Ham Hock Broth:
- 1/2 cup olive oil
- 8 mild Italian sausages roughly chopped
- into 1" rounds
- 1 pound dried sausage roughly chopped
- 7 chicken breasts seasoned to taste
- with paprika, salt and pepper on both
- sides, and cut into 1 1/2" chunks
- 20 peeled iced uncooked shrimp seasoned to taste
- with paprika, salt and pepper
- 2 carrots finely minced
- 1 onion finely chopped
- 2 celery stalks finely minced
- 10 garlic cloves minced
- 6 cups arborrio rice/risotto
- 3 cups white wine
- Ham Hock Flavored Broth (see recipe)
- Grey sea salt to taste
- Freshly-ground black pepper to taste
- 6 ham hocks
- 2 roughly cut onions
- 1 1/2 cup olive oil
- 2 carrots, roughly chopped
- 2 celery stalks roughly chopped
- 1 bulb garlic
- 2 Tbsp. paprika
- 2 Tbsp. tomato paste
- 2 8-ounce cans tomato puree
- 64 ounces chicken stock
- 2 bay leaves
- 4 cups water
- 1 pinch saffron

- 1 teaspoon sweet paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon white rice
- 3 tablespoons lime juice (2 limes)
- 2 tablespoons fish sauce
- 2 tablespoons water
- 1/2 teaspoon sugar
- 1 (1 1/2 pound) flank steak, trimmed
- Salt and white pepper, coarsely ground
- 4 shallots, sliced thin
- 1 1/2 cups fresh mint leaves, torn
- 1 1/2 cups fresh cilantro leaves
- 1 Thai chile, stemmed and sliced thin into rounds
- 1 seedless English cucumber, sliced 1/4 inch thick on bias
Eggplant Gratin

Preheat the oven to 400 degrees F
- Good olive oil, for frying
- 3/4 pound eggplant, unpeeled, sliced 1/2-inch thick
- 1/4 cup ricotta cheese
- 1 extra-large egg
- 1/4 cup half-and-half
- 1/2 cup plus 2 tablespoons freshly grated Parmesan
- Kosher salt
- Freshly ground black pepper
- 1/2 cup good bottled marinara sauce
Molasses-Pecan Butter

Using a stand mixer fitted with the whisk, whip the butter on medium speed until smooth, about 30 seconds
