Chinese Barbeque Pork - CI

To facilitate cleanup, spray the rack and pan with vegetable oil spray
- 4 pound boneless pork butt (Boston butt), cut into 8 strips and excess fat removed, see illustrations below (also see illustrations for removing the bone from a bone-in pork butt, if necessary)
- 1/2 cup sugar
- 1/2 cup soy sauce
- 6 tablespoons hoisin sauce
- 1/4 cup dry sherry
- 1/4 teaspoon ground white pepper
- 1 teaspoon Chinese five-spice powder
- 1 tablespoon toasted sesame oil
- 2 tablespoons grated fresh ginger (from 4- to 6-inch piece)
- 2 medium cloves garlic, minced or pressed through a garlic press (about 2 teaspoons)
- 1/4 cup ketchup
- 1/3 cup honey

Classic Egg Salad

1. Place eggs in medium saucepan, cover with 1 inch of water, and bring to boil over high heat
- 6 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons minced red onion
- 1 tablespoon minced fresh parsley leaves
- 1/2 medium stalk celery, chopped fine (about 3 tablespoons)
- 2 teaspoons Dijon mustard
- 2 teaspoons lemon juice

Crab Cakes

The amount of bread crumbs you add will depend on the crabmeat’s juiciness
- Crab Cakes
- 1 pound lump crabmeat (preferably jumbo lump), picked over to remove cartilage and shell fragments
- 4 medium scallions, green part only, minced (about 1/2 cup)
- 1 tablespoon fresh parsley leaves or cilantro, dill, or basil, chopped
- 1 1/2 teaspoons Old Bay seasoning
- 2 tablespoons dry bread crumbs, or up to 1/4 cup (see headnote)
- 1/4 cup mayonnaise
- Salt and ground black pepper
- 1 large egg
- 1/4 cup unbleached all-purpose flour
- 1/4 cups vegetable oil
- Creamy Chipotle Chile Sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 teaspoons canned chipotle chile in adobo sauce (minced)
- 1 small clove garlic, minced or pressed through a garlic press
- 2 teaspoons minced fresh cilantro leaves
- 1 teaspoon lime juice from 1 lime
Toasted Almond Meringue Cookies

Meringues may be a little soft immediately after being removed from the oven but will stiffen as they cool
- 2 teaspoons cornstarch
- 3/4 cup sugar (5 1/4 ounces)
- 4 large egg whites
- 1/2 teaspoon almond extract
- 1/8 teaspoon table salt
- 1/3 cup coarsely chopped toasted almonds
- 1 teaspoon coarse sea salt, such as Maldon (optional)
Red Beans and Rice - CI

If you are pressed for time you can “quick-brine” your beans
- Table salt
- 1 pound small red beans (about 2 cups), rinsed and picked over
- 4 slices bacon (about 4 ounces), chopped fine (see note)
- 1 medium onion, chopped fine (about 1 cup)
- 1 small green bell pepper, seeded and chopped fine (about 1/2 cup)
- 1 celery rib, chopped fine (about 1/2 cup)
- 3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)
- 1 teaspoon fresh thyme leaves
- 1 teaspoon sweet paprika (see note)
- 2 bay leaves
- 1/4 teaspoon cayenne pepper
- Ground black pepper
- 3 cups low-sodium chicken broth
- 6 cups water
- 8 ounces andouille sausage, halved lengthwise and cut into 1/4-inch slices (see note)
- 1 teaspoon red wine vinegar, plus extra for seasoning
