Bring a large pot of salted water to a boil over high heat
- 9 lasagna sheets, fresh or dried
- 1 teaspoon olive oil, plus 1 tablespoon, divided
- 2 (8.5-ounce) jars sun-dried tomatoes, drained
- 1 1/2 packed cups fresh basil leaves
- 1/2 cup grated Parmesan, plus 3/4 cup
- 1/4 pound pancetta, diced
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 bunches asparagus, trimmed and cut into 1-inch pieces
- 1 (15-ounce) container whole milk ricotta cheese
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups shredded whole milk mozzarella cheese
- 2 tablespoons butter
Spinach, Ham & Parmesan Soufflé

Preheat the oven to 375 degrees
- 10 ounces spinach, trimmed (can substitute 10 ounces broccoli rabe, trimmed)
- 1 slice firm white bread, processed to crumbs in a food processor (1/2 cup)
- 1/2 cup freshly grated Parmesan cheese
- 4 tablespoons (1/2 stick) unsalted butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 large eggs, separated
- 2 large egg whites
- 4 ounces lean ham, cut into julienne strips (1 cup)

Be sure to use Italian fontina rather than bland and rubbery Danish or American fontina

- 1 tablespoon table salt
- 20 ounces curly spinach (2 bags), stemmed and rinsed

- 5 tablespoons unsalted butter
- 1 tablespoon unsalted butter for baking dish
- 5 large shallots, minced (about 1 cup)
- 4 medium cloves garlic, minced or pressed through garlic press (generous 1 tablespoon)
- 1/4 cup unbleached all-purpose flour
- 3 1/2 cups whole milk
- 2 bay leaves
- 3/4 teaspoon fresh grated nutmeg
- 1/2 teaspoon table salt
- 1/4 teaspoon ground black pepper

This shrimp avocado salad has all of the best flavors of summer
- 1/2 lb (3 to 4 medium) Roma tomatoes, chopped
- 1/2 English cucumber or 3 smaller garden cucumbers, sliced
- 1/2 medium red onion, thinly sliced
- 2 avocados, peeled, pitted and sliced
- 1 cup corn kernels (from 2 fresh cobs or canned drained corn)
- 1 medium romaine lettuce (5 to 6 cups chopped)
- 2 Tbsp unsalted butter
- 1 lb large raw shrimp, peeled and deveined
- 1 tsp cajun spice
- 2 cloves garlic, pressed
- Pinch of salt
- 3 Tbsp olive oil (mild or extra virgin)
- Juice of 1 large lemon (about 3 Tbsp) (it's ok to sub lime juice)
- 1/2 bunch cilantro, (1/2 cup chopped)
