Greek Potatoes (Oven-Roasted and Delicious!)

These potatoes are a staple in our home
- 8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
- 4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
- 1/2 cup olive oil
- 1 cup water
- 1 tablespoon dried oregano (get the Mediterranean, it's the best!)
- 1 lemon, juiced
- sea salt
- fresh coarse ground black pepper
WHITE FISH WITH LEMON BUTTER SAUCE

This White Fish with Lemon butter Sauce is succulent, refreshing, and easy to make
- 4 fillets of firm white fish, at least 1 inch thickness, approx 6-8 oz each
- 3 TB salted butter
- 2 shallots, minced
- 3 cloves garlic, minced
- 2/3 cup dry white wine
- 2 TB fresh lemon juice
- 1 TB fresh parsley, chopped
- grated zest of 1 lemon
- 3 TB olive oil
- kosher salt and freshly ground black pepper
Chicken Marsala

1. Lightly salt & pepper breasts
- 4 Tbs Butter
- 4 shallots chopped fine
- 1/4 cup dry marsala wine(not cooking)
- 1 tsp lemon juice
- 4 Boneless skinless chicken breasts
- 1/2 lb sliced mushrooms
- 1/2 cup heavy cream

- 1 Gallon-Chicken Stock
- 12 Ounces-Shredded Cheese

- 2 Pounds-Crab Meat-pick for shells
- 1/4 Cup-Olive Oil-Lite
- 1/4 Cup-Bacon-cooked crisp-crumbled

LMB Chili

Chili for competition, fills oval crocpot
- 4 lb ground beef
- 1 onion chopped
- 1 large garlic clove minced
- 1 lb chorizo sausage
- 3 lbs denver or sirloin steak,
- 28 oz can crushed tomato
- 2- 28 oz can petite diced tomato
- 2 jalapenos, left whole. slit on tip.
- 2 bay leaves
- chili powder
- 16 oz can northern beans
- 16 oz can canneloni beans
- 2 16 oz cans black beans
- 2 16oz can kidney beans
- 1/4 franks
- kosher salt
- garlic salt
- pepper
Margarita Chicken Skewers

Preparation In bowl, toss first 7 ingredients; season
- 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup tequila
- 2 tablespoons lime zest plus 4 tbsp. juice
- 2 tablespoons sugar
- 4 cloves garlic, grated

Caprese Chicken

In a large skillet over medium-high heat, heat oil
- 1 tbsp. extra-virgin olive oil
- 1 lb. boneless skinless chicken breasts
- kosher salt
- Freshly ground black pepper
- 1/4 c. balsamic vinegar
- 2 cloves garlic, minced
- 1 pint grape tomatoes, halved
- 2 tbsp. shredded basil
- 4 slices mozzarella
Asparagus Wrapped in Prosciutto with Beurre Blanc

- 1 large bunch asparagus (18 spears), trimmed
- 6 thin slices prosciutto
- 2 tablespoons extra-virgin olive oil
- Freshly ground black pepper
