Steak with Tomato-Bacon Salad Topper

- 8 slices smoky bacon
- 4 flat iron or sirloin steaks, 8 ounces each
- 2 large garlic cloves, halved
- Extra-virgin olive oil, for drizzling, plus 3 tablespoons
- 2 sprigs rosemary, leaves chopped
- Salt and freshly ground black pepper
- 2 pints cherry tomatoes or multi-colored baby heirloom tomatoes, halved or quartered
- 1/2 small red onion, chopped
- 1 cup shredded basil leaves
- 2 cups baby arugula
- Parmigiano-Reggiano, for shaving
Blackened Seasoning 3

- 2 TBS Paprika
- 2 TBS Table Salt
- 1 TBS Garlic Powder
- 1 TBS Black Pepper (cafe ground)
- 1 TBS Cayenne Pepper

- 12 OREO Cookies, crushed
- 1/4 cup (1/2 stick) butter, melted
- 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1 can (6 oz.) frozen limeade concentrate, thawed
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- 2 tsp. grated lime zest

Bainbridge Fondue Broth

- 2 bay leaves
- 3 large garlic cloves, minced
- 2 teaspoons dried parsley
- 1-1/2 teaspoons fresh ground pepper
- 1 tbs better than boullion beef
- 1 cup Pinot Grigio wine
- 6 cups water
- 1 (1 ounce) package onion soup mix
Mrs. K.A.M. Chili

Enough Water to get it boiling then to keep it simmering for hours
- Meat
- 1 med. or lg. chopped Onion
- 1 med. or lg. chopped Green bell pepper
- 1 lg. chopped Jalape�o pepper
- 3 cloves minced Garlic
- 1 can Stewed tomatoes or 1 can Rotel tomatoes if you want it hot
- 4 to 6 cans Tomato sauce
- 1 or 2 sm. can Tomato paste
- This is where it goes by taste, looks and how much you are making.
- 2 or 3 splashes of Worcestershire sauce
- 3 or 4 shakes of Cumin
- A bunch of shakes of Chili powder
- A few shakes of Red pepper unless you want it hotter
- A bunch of shakes of Paprika its mostly for color
- 2 or 3 shakes of Garlic powder
- 2 or 3 shakes of Salt & pepper
- 3 fresh Cayenne peppers
- 1 to 2 tablespoon Sugar

To make meatballs: Stir the first 6 ingredients in a large bowl to blend
- 1 small onion, grated
- 1/3 cup chopped fresh Italian Parsley
- 1 large egg
- 1 teas. minced garlic
- 1 teas. salt
- 1 slice fresh white bread, crust trimmed torn in small pieces
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 8 ounces ground beef
- 8 ounces groung pork
- freshly ground pepper
- Soup
- 12 cups low-sodium chicken broth
- 1 pound curly endive, coarsely chopped or (1 pound of escarole)
- 2 large eggs
- 2 tbsp. grated Parmesan
- extra Parmesan for garnish

- 8 ounces cremini or button mushrooms, halved
- 1 teaspoon dried thyme
- 3/4 cup balsamic vinegar

- 5 lbs Ground Pork
- 5 cups chopped onions
- 10 cloves garlic minced
- 10 cans (10 1/2 to 10 3/4) tomatoe soup
- 3 cans corn w/juice
- 5 cups chopped green peppers
- 5 Tbs vinegar
- Fritos and shedded cheddar cheese
- 10 Tbs chill powder
