Cheeseballs: Beer Cheeseball

Form into ball and roll in chopped nuts
- Let both soften at room temperature and blend with:
- 8 oz. cream cheese
- 8 oz. grated cheddar
- 1 Tbls. Lemon juice
- 1/2 cup beer
Casseroles - Baked Potato Casserole

Place potatoes in large saucepan
- 8 medium potatoes (2-1/2 to 3 lbs.) peeled and cut into 1” chunks
- 1 cup 2% lowfat evaporated milk
- 1/2 cup sour cream
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 cups shredded cheddar cheese, divided
- 6 slices cooked and crumbled bacon, divided
- Sliced green onions, optional

- 1 yellow cake mix
- 8 oz. pkg. cream cheese, softened
- 1/3 cup sugar
- 1 teas. Lemon juice
Sour Cream Potatoes

Place potatoes in large saucepan
- 10 medium red potatoes, peeled and quartered
- 1 pkg (8 oz) cream cheese, cubed
- 1 cup (8 oz) sour cream
- 1/4 cup milk
- 2 Tbls butter, divided
- 1 Tbls dried parsley
- 1-1/4 tsp garlic salt
- 1/4 tsp paprika
Salads - Seven Layer Salad

Refrigerate overnight
- Layer as follows in 13x9 pan:
- 1 Head Lettuce, torn
- 1 chopped green pepper
- 1 or 2 chopped green onions (use green tops, too!)
- 1 small bag frozen peas (initial recipe calls out for canned peas, but I like the frozen!)
- 2 cups Cheddar Cheese
- Make dressing by combining 1 cup Miracle Whip, 1/2 cup Sour Cream, 1/2 cup Buttermilk dressing and about 1Tbls. sugar. Adjust amounts to your liking. You want this to be a bit runny because you are going to pour this over top. Then top with bacon bits.
Candy - Peanut Butter Balls

Energy Balls!
- 1 cup peanut butter
- 1 cup powdered sugar
- 1/2 cup milk
- 1 teas. Vanilla
- 2 cups quick oats
- Optional: 1 cup chocolate chips or raisins
Cookies - Best Bar Cookie

As above
- Base Layer:
- 1 cup flour
- 1/2 cup butter, softened
- 1/4 cup sugar
- Mix together well and press into 13 x 9 baking pan. Bake at 375 for 10 minutes.
- Next Layer:
- 1 cup graham cracker crumbs
- 1 tsp. baking powder
- 1 can condensed milk (aka Eagle Brand…I use low-fat!)
- 1/2 cup chocolate chips
- 1/4 cup peanut butter chips (I added this to original recipe, so it’s optional)
- 1/2 cup chopped nuts, optional (I used a mixture of different kinds)
- Melt together and pour over crust…(it’s thick…spoon and spread gently).
- Bake at 325 for 25 minutes. Cool.
- Frosting:
- 1/2 cup butter, softened
- 1-1/2 cup powdered sugar
- 1 tsp. vanilla
- Mix well. Frost bars.
Appetizers - Stromboli

- 5 slices ham
- 5 slices sandwich pepperoni
- 5 slices genoa salami
- 5 slices mozzarella or provolone cheese
- 1 egg
- 1/2 to 1 tsp. basil
- 1 tsp. oregano
- Salt and pepper
- 1 loaf frozen bread dough (defrosted)

- 1 German Chocolate Cake Mix
- 1 Tbls. water
- 1 cup nuts
- 1 stick butter or margarine, softened
- 1 pkg. Kraft Caramels
- 1/3 cup evaporated milk
- 1 cup chocolate chips
Main Dish - Lasagne

Saute meat in oil, breaking into particles
- Cheese Filling:
- 1 lb. rippled lasagna noodles
- 1 lb. ground beef
- 2 Tbls. oil
- 1/2 cup tomato juice or water
- 1 Qt of my homemade spaghetti sauce (or 3- 10 oz. jars)
- 1-1/2 tsp. salt
- 3/4 tsp. oregano
- 1/2 cup parmesan cheese
- 1 lb. cottage cheese
- 8 oz. shredded mozzarella cheese
- 4 eggs
- 1 tsp. salt
- Dash pepper
- 1/4 tsp. oregano
