Chicken Satay

Trim fat from chicken. Cut chicken into ½ inch strips
- 1 lb. boneless, skinless chicken breasts
- 1/3 cup hoisen sauce
- 1/3 cup plum sauce
- 2 Tbls. sliced green onions
- 1 Tbls. ginger root (I use nutmeg or ground ginger)
- 2 Tbls. dry sherry (cooking sherry)
- 2 Tbls. white vinegar

- Base Layer:
- 1 cup flour
- 1/2 cup butter, softened
- 1/4 cup sugar
- Mix together well and press into 13 x 9 baking pan. Bake at 375 for 10 minutes.
- Next Layer:
- 1 cup graham cracker crumbs
- 1 tsp. baking powder
- 1 can condensed milk (aka Eagle Brand…I use low-fat!)
- 1/2 cup chocolate chips
- 1/4 cup peanut butter chips (I added this to original recipe, so it’s optional)
- 1/2 cup chopped nuts, optional (I used a mixture of different kinds)
- Melt together and pour over crust…(it’s thick…spoon and spread gently).
- Bake at 325 for 25 minutes. Cool.
- Frosting:
- 1/2 cup butter, softened
- 1-1/2 cup powdered sugar
- 1 tsp. vanilla
- Mix well. Frost bars.

One of our Tailgating favorites

Sauces - Karen's Spaghetti Sauce

Original recipe shown along with my modifications
- Blend all in food processor. Cook and allow to slowly bubble for 2-3 hours, stirring often. Then add:
- 1/2 bushel (5 gal.) tomatoes, peeled
- 5 lbs. (6 cups) onions
- 4 hot peppers (I add 6-8 usually)
- 3 green peppers (I usually add 5)
- 1 cup sugar
- 1 cup canola or olive oil
- 1/2 cup salt
- 5 Tbls. basic
- 3 Tbls. oregano
- 3 Tbls. parsley
- 6 bay leaves
- 5 Tbls. minced garlic
- 4 Tbls. fennel seed
- 4 – 12 oz. cans Contadina Tomato Paste
Casseroles: Chicken Pot Pie

Cook onion in butter until tender, but not brown
- Double Crust Pastry
- 1/2 cup chopped onion
- 6 Tbls. butter
- 1/2 cup flour
- 3 cups chicken broth
- 3 cups cubed cooked chicken
- 10 oz. package frozen peas & carrots, cooked and drained
- 1/4 cup chopped pimento (optional)

- 1/2 jigger Rum
- 1/2 jigger Vodka
- 1/2 jigger Gin
- 1/2 jigger Triple Sec

- 2-3 large cloves garlic
- 2 oz. jar diced pimentos
- 3 cups coarsely grated sharp cheddar cheese
- 1/3 to 1/2 cup mayonnaise
Breads - Cranberry Nut Bread

Mix together. Pour into 2 greased loaf pans (or 8 greased mini-bundt pans)
- 2-1/4 cup flour
- 1-1/4 cup sugar
- 1-1/2 tsp. baking powder
- 1/2 tsp. soda
- 1 egg, well beaten
- 1 cup orange juice
- 4 Tbls. melted butter
- 1/4 cup water
- Grated orange rind
- 1 cup coarsely chopped pecans
- 1-1/2 cup chopped cranberries
Stromboli

Defrost bread but do not allow to rise
- 5 slices ham
- 5 slices sandwich pepperoni
- 5 slices genoa salami
- 5 slices mozzarella or provolone cheese
- 1 egg
- 1/2 to 1 tsp. basil
- 1 tsp. oregano
- Salt and pepper
- 1 loaf frozen bread dough (defrosted)
