Minestrone Soup (Crockpot)

In slow cooker, combine beef, water, tomatoes, bouillon, onion, parsley, salt, thyme and pepper
- 1 lb. lean beef stew meat
- 6 cups water
- 1 can (28 oz.) tomatoes with liquid
- 1 cube beef bouillon
- 1 medium onion, shopped
- 1 Tbls. minced dried parsley
- 2-1/2 tsp. salt
- 1-1/2 tsp. ground thyme
- 1/2 tesp. Pepper
- 1 medium zucchini, thinly sliced
- 2 cups finely chopped cabbage
- 1 can (16 oz.) garbanzo beans, drained
- 1 cup uncooked shell/elbow macaroni
- 1/4 cup grated Parmesan cheese

For pie shell: Prick bottom, brush with milk, bake in 450 oven for 8-10 minutes or until golden brown
- For single crust:
- 1 cup flour
- 1/2 tsp. salt
- 1/3 cup shortening
- 3-4 Tbls. cold water
- Double crust:
- 2 cup flour
- 1 tsp. salt
- 2/3 cup shortening
- 5-7 Tbls. cold water
Vegetables: Baked Potato Casserole

Place potatoes in large saucepan
- 8 medium potatoes (2-1/2 to 3 lbs.) peeled and cut into 1” chunks
- 1 cup 2% lowfat evaporated milk
- 1/2 cup sour cream
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 cups shredded cheddar cheese, divided
- 6 slices cooked and crumbled bacon, divided
- Sliced green onions, optional
Main Dish - Chicken Breast Casserole

Cook chicken in water until tender
- 4 chicken breasts
- 2 cans cream soup (mushroom or chicken)
- 1 package cubed stuffing (Pepperidge Farms)
Salads- Bean Salad - Mexican Caviar

Drain the canned stuff. Make a day ahead to let marinate
- Dressing-
- 1 C Olive oil
- 1/2 C cider vinegar
- 1/2 C sugar.
- Salt & Pepper
- Heat until just boiling to dissolve sugar, let cool.
- 1 C each, chopped Celery, Green Pepper, Onion (red or sweet, whatever you like.) I don't bother measuring this stuff.
- 1 Can pinto beans with Jalepenos (in the mexican section)
- 1 can black eyed peas
- 1 can white shoepeg corn
- 1 jar CHOPPED pimento
Crunchy Peanut Butter Cookies

Preheat oven to 375. In mixing bowl, cream butter and sugar
- 1/2 cup butter or margarine, softened
- 1 cup sugar (part brown sugar if desired)
- 1/4 cup peanut butter
- 1 egg
- 1/2 tsps. Vanilla
- 1 cup flour
- 1 tsp. Baking powder
- 1/2 tsp. Soda
- 1/2 tsp. Salt
- 1 cup corn flakes
- 1 cup rolled oats

I like these better than the bread and butter pickles made with cucumbers! Cooks
- 16 c. sliced fresh zucchini
- 4 c. thinly sliced onions
- 1/2 c. pickling salt (not iodized)
- 4 c. white vinegar
- 2 c. sugar
- 4 tbsp. mustard seed
- 2 tbsp. celery seed
- 2 tsp. ground turmeric
Sandwiches: Meatball Heros (Meatball Sub)

In saucepan, heat together the cooking oil and the garlic
- 2 Tbls. cooking oil
- 1 clove garlic, minced
- 1/2 envelope onion soup mix
- 1 cup water
- 8 oz. can tomato sauce
- 1 teas. Sugar
- 1 teas. Oregano
- 1 lb. ground beef
- 1/2 teas. Salt, dash of pepper
- 1/3 cup fine dry bread crumbs
- 1/2 cup milk

- 1/2 cup diced pepperoni
- 1/2 cup shredded part-skim mozzarella
- 1/4 teas. dried oregano
- 1 egg, separated
- 1 tube (8 oz Crescent Rolls)

- 6 oz. package semi sweet chocolate chips
- 3/4 cup chopped pecans
- 1 (18.5 oz.) Chocolate Butter Cake Mix
- 4 eggs
- 1/2 cup oil
- 1/4 cup water
- 1 tsp. vanilla
- 1 (3.5 oz) box instant chocolate pudding
- 1 (8 oz.) carton sour cream
