Good & Spicy Chili

1. Place all the ingredients in crockpot
- 2 (15 ounce) cans dark kidney beans
- 2 (15 ounce) cans pinto beans
- 2 (15 ounce) cans chili beans
- 1 medium-sized onion, chopped
- 1 large tomato, diced
- 1 (16 ounce) can tomato sauce
- 1-2 tablespoons jalapeno peppers, minced (I use pickled)
- 2 tablespoons jalapeno juice
- 1/2 cup lentils, optional
- 1 teaspoon seasoning salt
- 1 teaspoon mild chili powder
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
Vegan Mushroom Gravy

In a large skillet over medium-high heat, bring 1/2 cup broth to a simmer
- 3 1/2 cups low-sodium vegetable broth, divided
- 1 cup chopped white onion
- 4 cloves garlic, finely chopped
- 8 ounces wild mushrooms, trimmed and chopped
- 2 tablespoons finely chopped fresh thyme
- 1 tablespoon finely chopped fresh rosemary
- 1/4 cup Merlot, or other spicy red wine
- 2 tablespoons reduced-sodium tamari
- 3 tablespoons nutritional yeast
- 2 tablespoons whole-wheat or spelt flour
- 1/4 teaspoon ground black pepper
Orange Pan-glazed Tempeh Recipe

Put the orange juice in a small bowl
- 1 cup freshly squeezed orange juice (3-4 large juicy oranges)
- 1 tablespoon freshly grated ginger
- 2 teaspoons tamari (or soy sauce)
- 1 1/2 tablespoons mirin
- 2 teaspoons maple syrup
- 1/2 teaspoon ground coriander
- 2 small garlic cloves, crushed
- roughly 10 ounces of tempeh (or extra-firm tofu)
- 2 tablespoons olive oil
- 1/2 lime
- a handful of cilantro (coriander) leaves

- 1/2 of an onion, finely chopped
- 2 cans of peas, any kind, undrained (petit pois recommended)
- 1 teaspoon of granulated sugar
- 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama) or to taste, optional
- 2 pinches of kosher salt
- 1/4 teaspoon of freshly cracked black pepper, or to taste
White Bean Soup

- 1/4 cup olive oil, plus more for brushing
- 1/4 cup chopped pancetta
- 1/2 yellow onion, chopped
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 4 garlic cloves, minced
- 3 cans (each 15 oz.) cannellini beans, drained
- 5 cups chicken broth
- 3/4 tsp. finely chopped fresh thyme
- 1/2 cup grated Parmigiano-Reggiano cheese
- Kosher salt and freshly ground black pepper, to taste
- 12 baguette slices, each 4 inches long and 1/2 inch thick

1.Bring a large pot of heavily salted water to a boil 2
- 1 lb. elbow macaroni or piccolini
- 3 cups broccoli florets
- 1/4 cup vegan margarine
- 1/3 cup all-purpose flour
- 3 cups soy, almond, or rice milk
- 1/2 cup nutritional yeast
- 2 Tbsp tomato paste
- 2 tsp salt
- 1 tsp garlic powder
- 1 Tbsp lemon juice
- 1 Tbsp agave syrup
Mushroom and Eggplant cakes

In a large non-stick skillet, saute the onion and both types of peppers in the olive oil for 5 minutes to soften
- 1 cup onion, diced
- 1/2 cup red pepper, destemmed, deseeded, and diced
- 1/2 cup orange or yellow pepper, destemmed, deseeded, and diced
- 2 T. olive oil
- 1 1/2 lbs. eggplant, peeled, and cut into 1/2-inch cubes
- 1 cup baby bella mushrooms or other mushrooms of choice, roughly chopped
- 2 T. garlic, minced
- 2 T. dry sherry
- 2 T. balsamic vinegar
- 1/4 cup freshly chopped basil
- 1/4 cup freshly chopped parsley
- 2 T. freshly chopped rosemary
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 1/3 cup whole wheat flour
- 2 T. nutritional yeast flakes
- 3/4 cup breadcrumbs
- 1/4 t. paprika

1.Preheat oven to 350°F. Grease and flour a 13x9-inch baking pan
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup cola-flavored carbonated beverage
- 1/2 cup buttermilk
- 2 large eggs, beaten
- 1 teaspoon vanilla extract

- 1/2 cup butter, melted
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons cola-flavored carbonated beverage
- 1 (16-ounce) box confectioners’ sugar
- 1 .In a large bowl, combine melted butter, cocoa powder, and cola. Using an electric mixer, gradually beat in confectioners’ sugar.
