Crispy Peanut Butter Treats With Chocolate Chips

1.Pour the rice cereal into a large bowl
- 1 box brown rice crisps cereal
- 1 3/4 cup(s) of brown rice syrup
- 1 pinch of fine sea salt
- 3/4 cup(s) of Earth Balance® Peanut Butter
- 1/2 cup(s) of grain-sweetened, nondairy chocolate or carob chips

1. Preheat the oven to 350 degrees
- 1.5 sleeves of saltine crackers
- 1 stick (4 oz) butter
- 1 cup packed brown sugar
- 2 cups chocolate chips
Paula Deen's Southern Pecan Brownies

Preheat oven to 350. Line a 9x13 pan with tin foil and lightly grease the foil
- 1 1/2 cups butter
- 5 (1 oz each) squares unsweetened chocolate
- 2 1/2 cups sugar
- 6 large eggs
- 2 cups flour
- 1/2 tsp salt
- 1 tsp vanilla
- 1 cup milk chocolate chips
- 1 cup toasted chopped pecans (to toast spread pecans evenly on cookie sheet and bake at 350 5-10 minutes, don't let get too dark)
- chocolate frosting
- 1 cup sugar
- 1 cup heavy cream
- 5 1 oz squares unsweetened chocolate
- 1/2 cup butter
- 1 cup confectioners sugar
- In a med saucepan bring sugar and cream to a simmer over med low heat, simmer for 6 mins. Remove from heat and add chocolate and butter, stirring until melted. Whisk in confectioners sugar.
Vegan Roast w/ Veggies and Mashed Potatoes

Boil potatoes (skin on) with 3 tbs kosher salt until soft
- Red Wine Reduction:
- One bottle Cabernet Sauvignon or Syrah (don't spend too much)
- 1 large white onion chopped
- 1 1/2 " thick slice of white onion
- 1 cup chopped celery
- 2-3 cloves of garlic
- 1 cup chopped carrots
- 2 sprigs of thyme
- 2 About 2 tbs. organic flour (all-purpose)
- 1 cup better than bullion brand (no beef) beef stock (make it strong)
- Extra virgin olive oil, salt and pepper as needed
- First, in a lightly oiled grill pan or small sauté pan, cook the onion slice until it is dark and charred (burnt). Set it aside.
- 2 tbs. Extra virgin olive oil
- Sauté onions until translucent. Add celery and garlic, stir 2 minutes and add flour, stir for 2 minutes.
- Add beef stock, red wine, and the remaining ingredients.
- Simmer until sauce has gone from purple to brown and is thick enough to coat the back of a spoon.
- Strain and set aside.
- Mashed Potatoes:
- 10 About 10 red creamer potatoes
- 1/2 stick melted vegan butter
- Chopped chives
- Salt and pepper
Chocolate Peppermint Truffle Tart with Chocolate Crumb Crust

Preheat oven to 325F. Butter a 9 inch pie pan or a 9 1/2 inch tart pan with a removable bottom
- Chocolate Crumb Crust
- ■1 1/2 cups chocolate wafer cookie crumbs (about 40 cookies)
- ■3 Tbsp. sugar
- ■1/4 cup (1/2 stick) unsalted butter, melted
- Chocolate Truffle Filling
- ■3/4 cup heavy cream
- ■5 Tbsp. unsalted butter, cut into 5 pieces
- ■16 oz semisweet chocolate chips
- ■3/4 tsp. peppermint extract.
- Fresh mint leaves or crushed candy canes for garnish
Vegan Tacos

1.Spray a non-stick skillet with cooking spray and put over medium heat
- 1 pound ground meatless crumbles (Yves)
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Tabasco sauce
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon red pepper flakes
- 4 whole wheat crunchy taco shells
- 4 whole wheat soft taco shells

In a large bowl, toss the peaches with the sugar, flour, cinnamon, and lemon juice
- 8 peaches, peeled, pitted, and sliced
- 1 c brown sugar
- 3 T flour
- 1 t cinnamon
- 1 T lemon juice

- 3 cloves garlic
- 1/3 cup pine nuts
- 1/3 cup grated Parmesan cheese
- 1 cup roasted red bell pepper (fresh or jarred)
- 1 cup basil leaves
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 cup extra virgin olive oil
- 1 lb. penne pasta
- 1/4 cup heavy cream, optional
