Combination Casserole

Brown ground beef and onion
- 1/2 lb. bacon (cooked and chopped)
- 1/2 lb. ground beef
- 1 C. chopped onion
- 1 stalk celery, chopped
- 1 C. catsup
- 3/4 C. brown sugar
- 1/2 t. salt
- 1 can green lima beans
- 1 can red kidney beans
- 2 - 1 lb. cans pork and beans
Chicken Piccata

Pound chicken to 1/4". Sprinkle with salt and pepper
- 4 skinless chicken breast halves
- 3 T. butter -- room temp.
- 1 1/2 T. flour, plus additional flour
- 2 T. olive oil
- 1/3 C. dry white wine
- 1/4 C. fresh lemon juice
- 1/2 C. canned chicken broth
- 1/4 C. drianed capers (rinsed)
- 1/4 C. fresh parsley
GROUND TURKEY ENCHILADAS

Cook ground turkey in skillet until no longer pink over medium heat
- □ 1 1/2 lbs ground turkey
- □ 1 pkg frozen spinach - thawed and drained
- □ 2 cups salsa
- □ 1 can diced tomatoes
- □ 1 pkg flour tortillas
- □ 2 cups Mexican blend cheese
- □ 1 8 oz. block cream cheese
- □ ground cumin to taste

E-Z Slow Cooker Pork Roast

- 3-4 lb. pork loin roast
- 1 can cream of mushroom or cream of chicken soup
- 1 C. water or stock
- 1 pkg. dry onion soup mix
- 1 can mushrooms, drained (optional)

Start a large pot of lightly salted water boiling
- 1 (16 ounce) package whole-wheat blend penne pasta (i.e. Barilla Plus®)
- 2 tablespoons extra virgin olive oil
- 3/4 cup chopped sweet onion
- 1 tablespoon minced or chopped garlic
- 28 ounce can Italian-style diced tomatoes (or similar)
- 1 teaspoon crushed red pepper (optional)
- 3/4 cup chopped fresh basil
- Salt and pepper to taste
- 1/4 cup vodka
- 1 cup fat free half and half
- 1 cup low fat milk
- 1/2 cup shredded or grated Parmesan cheese
Carnation Evaporated Milk Macaroni and Cheese

Growing up as a kid my favorite food was mac and cheese
- 2 cups dry small elbow macaroni or shells
- 1/4 cup (butter or margarine, cut into pieces, about a 1/2 stick
- 1 can (12 fluid ounces) Nestle Carnation Evaporated Milk
- 2 large eggs
- 1 teaspoon dry mustard
- 1/2 teaspoon ground white pepper
- 2 cups (8 ounces) shredded cheddar cheese
- 1 cup (4 ounces) American cheese, cut into pieces

InstructionsPreheat oven to 450 degrees F
- 2 whole Chicken breasts boneless and skinless
- 2 Egg whites
- 2 tbl. Cornstarch
- Juice of 1/2 lemon
- 1 cup Dry, course bread crumbs
- 1 Tbl Fresh parsley chopped
- 1 teaspoon Kosher salt
- 1/4 teaspoon Ground black pepper
- Zest of 1 lemon minced
- 1/2 cup Parmesan cheese grated
- 3 tbl. Olive oil

- 2 cloves garlic, minced
- 1 cup chopped, fresh tomatoes
- 1/4 C. sliced, fresh basil
