Carrot Cake

Mix all ingredients. Bake 350 degrees for 1 hour
- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 c. pecans
- 3 c. grated carrots
- 1/2 large can crushed, undrained pineapple
Cilantro Lime Chicken and Rice Soup

In large pot, cook onion, celery, garlic, chili powder and cumin in olive oil
- 2 Tbsp olive oil
- 1 medium onion, chopped
- 1 large rib celery, chopped
- 2 garlic cloves, minced
- 1 heaping Tbsp chili powder
- 1 tsp cumin
- 8 cups chicken broth
- 1 can chopped green chilies, drained
- 1 bag frozen corn
- 1 14.5 oz can diced tomatoes
- 1 tsp dried oregano
- 1 tsp. salt
- 3 cups cooked and chopped chicken breast
- 1/4 cup chopped cilantro
- juice of 1 lime
- 1 cup instant white rice
- shredded cheddar cheese
- tortilla chips
Rice Pilaf

Dissolve chicken boullion in water to make broth
- 1 Tbsp butter
- orzo (or bits of broken spaghetti noodles)
- 2 1/2 cups water
- 2 chicken boullion cubes
- 1 cup white rice
Bacon Ranch Pasta Salad

Make pasta according to package directions
- 8 oz. bow tie pasta
- 1/3 c. ranch dressing
- 1/3 c. mayonnaise
- 1 Tbsp dry ranch seasoning mix
- cherry tomatoes
- english cucumbers
- crumbled bacon
Susan's Chicken

Put chicken, soup and dressing in crock pot
- 4 lbs frozen chicken tenders
- 2 pkgs. dry zesty italian dressing mix
- 2 cans Cream of Chicken Soup
- 1 8 oz block of cream cheese
Chicken Alfredo Stuffed Shells

Boil pasta shells to almost al dente (9 minutes)
- 25 large pasta shells
- 1/2 cup butter
- 1 cup heavy cream
- 3/4 cup freshly shredded parmesan
- 1 lb. chicken breast, cooked and shredded
- 1 1/2 c. ricotta cheese
- 1 c. shredded mozzarella
- 1/2 c. shredded parmesan
- 1/2 c. shredded romano
- 1 egg
- salt & pepper
Grapenut Bread

Soak grapenuts in buttermilk for 1 hour
- 1 c. grapenuts
- 2 c. buttermilk
- 1 tsp. baking soda
- 4 c. flour
- 2 tsp baking powder
- 2 eggs
- 1 tsp. salt

- 1/4 c. oil
- 3/4 c. chopped walnuts
Chicken Tortilla Soup

- 3 Tbsp butter
- 1 onion, chopped

- 1 pkg fajita seasoning mix

- 24 oz. medium salsa

- 4 chicken breasts, cooked and shredded

- 1 quart half and half

- 2 large eggs, beaten

- 1 3/4 sticks butter
- 4 heaping Tbsp. cocoa
- 6 Tbsp. milk
- 1 tsp. vanilla
- 3 1/4 c powdered sugar
