Blueberry Milk Shakes

In a blender, puree the ice cream, frozen blueberries, milk, honey and vanilla until thick and smooth
- 2 c light vanilla ice cream
- 2 c frozen blueberries
- 2 c 1% milk
- 2 tsp honey
- 1/2 tsp pure vanilla extract
- Fresh blueberries, for garnish
Tuna Orzo Salad

In a saucepan, bring the broth to a boil
- 3 cups chicken broth
- 1 cup orzo
- 1/4 cup red wine vinegar
- Salt and pepper
- 2 6 ounce cans olive-oil-packed tuna, drained, oil reserved
- 1 15 1/2 ounce can chickpeas, drained
- 1 cup grape tomatoes, cut in half
- 1 yellow or red bell pepper, chopped
- 1/2 red onion, finely chopped
- 1/2 cup chopped fresh basil or parsley
- 1/2 cup crumbled feta cheese
Home-Style Potatoes with Garlic and Rosemary

- 1/4 c extra virgin olive oil
- 4 red potatoes, cubed into 1/2-inch pieces

- 1/3 lb spinach leaves, washed

- 1 Tbsp raspberry preserves
