Savory Herb Pork Chops

1. Stir together 1/4 cup apple juice, 1 Tbsp

- 3 1/2 tablespoons light brown sugar, divided
- 1 tablespoon Dijon mustard
- 4 (3/4-inch-thick) boneless pork loin chops
- 1 teaspoon salt, divided
- 1 teaspoon coarsely ground pepper, divided
- 2 tablespoons vegetable oil
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 2 teaspoons chopped fresh rosemary
- 2 tablespoons balsamic vinegar, divided
- 1 tablespoon all-purpose flour

Sicilian Tuna-and-Potato Salad

In a large saucepan, combine the potatoes and enough water to cover
- 1 lb fingerling potatoes, sliced 1 inch think
- Salt and pepepr
- 2 lemons, 1 juiced and 1 cut into wedges
- 1 tsp anchovy paste (optional)
- 1 large clove garlic, grated or finely chopped and mashed with a little salt
- 1/4 c extra-virgin olive oil (EVOO)
- 1 pint cherry tomatoes, halved, or 4 plum tomatoes, thickly sliced
- 4 ribs celery with leafy tops, slice 1 inch thick on an angle
- 1 small red onion, quartered lengthwise and thinly sliced crosswise
- 1 c loosely packed flat-leaf parsley, coarsely chopped
- 1/2 c caperberries, halved or 1/4 c drained capers
- A generous handful of brine- or oil-cured black olives, pitted and coarsely chpped
- 1 small hot red chile, seeded and finely chopped
- 2 (6 oz) cans Italian tuna, drained
- 1 loaf ciabatta bread, torn into pieces
Mexican Chicken Spaghetti

Boil chicken breasts in a large pot, adding 1/2 tsp salt and 1/2 tsp pepper to water
- 1 lb boneless, skinless chicken breasts
- 1 lb Velveeta cheese, regular or Mexican, cubed
- 1 can Rotel tomatoes, regular or hot
- 1 lb spaghetti*
- 1 stick butter
- 1 can cream of chicken soup
- 1 can cream of mushroom soup*
- 1 medium onion, chopped
- 1 bell pepper, red or green, chopped
- salt and pepper to taste
Tuna with Vegetable Mayonnaise

- Sauce:
- 1/2 c diced seeded peeled cucumber
- 4 Tbsp finely chopped red bell pepper
- 4 Tbsp mayonnaise or salad dressing

- 4 (6-8 oz) fresh tuna steaks

Kate's Beef Stew

- 2 tablespoons all-purpose flour

- 1 lb dry chickpeas, sorted and rinsed

- Dipping Sauce:
- 1/2 c mayonnaise
- 1 Tbsp ketchup
- 2 Tbsp cream-style horseradish sauce
- 1/3 tsp paprika
- 1/4 tsp salt
- 1/8 tsp dried oregano
- 1 pinch ground black pepper
- 1/3 tsp cayenne pepper
