Hushpuppy Battered Catfish Nuggets With Spicy Tartar Sauce

Stir together first 7 ingredients in a medium bowl; let stand 5 minutes
- Spicy Tartar Sauce:
- 1 (8-ounce) package hushpuppy mix
- 1/2 cup milk
- 1/2 cup water
- 1 large egg, beaten
- 1 tablespoon sliced jalapeño peppers, minced
- 1 tablespoon hot sauce
- 1/2 teaspoon ground red pepper
- 2 cups CRISCO Vegetable Oil
- 1 1/4 pounds U.S. FARM-RAISED CATFISH fillets (about 4 fillets)
- VIVA Paper Towels
- 1 cup all-purpose flour
- 1 cup HELLMANN'S Real Mayonnaise
- 1 tablespoon sliced jalapeño peppers, finely minced
- 1 tablespoon finely minced onion
- 1 garlic clove, finely minced
- 1 teaspoon hot sauce
- 1/2 teaspoon lemon juice
- 1/4 teaspoon chili powder
- 1 pinch MORTON Salt
Twice Baked Potatoes

Pierce potatoes with a fork, wrap in foil, and bake at 400º for 1 hour or until soft
- 8 medium Russet baking potatoes
- 2 Tbsp butter
- 1 c sour cream
- 2-1/2 c shredded sharp Cheddar cheese, divided
- 1/4 c heavy cream
- 1/2 c milk
- salt and pepper to taste
- 4 strips bacon, cooked and diced
- 3 green onions, finely chopped
Easy Chicken Tamale Pie

In a large skillet, cook chicken over medium heat 6 - 8 minutes or until no longer pink, breaking into crumbles
- Optional toppings:
- 1 lb ground chicken
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14-1/2 oz) diced tomatoes, undrained
- 1 can (11 oz) whole kernel corn, drained

- 1 pkg (8-1/2 oz) corn bread/muffin mix

Coffee-Braised Brisket

Preheat the oven to 325º
- 4 4 4 Tbsp vegetable oil
- 5-6 5-6 5-6 lbs beef brisket
- 3 3 3 onions, sliced
- 6 6 6 cloves garlic, sliced
- 1/4 1/4 1/4 c sweet paprika
- 2 2 2 Tbsp ground cumin
- 1 1 1 can (14 oz) tomato puree
- 1/2 1/2 1/2 c (packed) light brown sugar
- 2 2 2 c brewed coffee
- 2 2 2 c chicken broth
- 6 6 6 cardamom pods, cracked open (I didn't use these)
Herb Butter-and-Goat Cheese Linguine with Fresh Tomatoes

Bring a large pot of water to a boil, salt it add the pasta and cook until al dente
- Salt and pepper
- 1 1 1 lb linguine pasta
- 8 8 8 oz goat cheese, crumbled
- 6 6 6 Tbsp butter
- 2 2 2 shallots, finely chopped
- 1/2 1/2 1/2 c white wine
- 1/4 1/4 1/4 c finely chopped flat-leaf parsley
- 1/4 1/4 1/4 c chopped fresh dill
- 1/4 1/4 1/4 c chopped fresh tarragon
- 2 2 2 Tbsp finely chopped fresh thyme
- 2 2 2 c chopped multicolored heirloom tomatoes
Flaky Cheddar-Chive Biscuits

Preheat oven to 425º. In a large bowl, whisk the first five ingredients
- 2-1/4 c all-purpose flour
- 2-1/2 tsp baking powder
- 2 tsp sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 c cold butter, cubed
- 1 c (4 oz) shredded cheddar cheese
- 3 Tbsp minced fresh chives
- 1 c buttermilk

- 26 oz jar prepared pasta sauce
- 4 oz pepperoni, cut into halves
- 1 tsp Italian seasoning

Pretzel-Crusted Chicken with Cheddar Cheese Sauce

In a shallow dish, whisk together egg and mustard until smooth
- 2 large eggs
- 1 Tbsp Dijon mustard
- 1-1/2 c crushed pretzels
- 1 Tbsp minced fresh thyme
- 1-1/2 lbs chicken cutlets
- 1/4 c olive oil, divided
- 2 Tbsp butter
- 2 Tbsp all-purpose flour
- 2 c milk
- 1-1/2 c shredded Cheddar cheese
- We didn't love the cheese sauce. It didn't have a lot of flavor.
Pasta and Pea Soup (with Sausage)

In a large Dutch oven or soup pot, heat the EVOO over medium heat
- 2 2 2 tsp EVOO
- 2 2 2 oz pancetta, finely chopped
- 1 1 1 onion, finely chopped
- 1/2 1/2 1/2 tsp dried marjoram or thyme
- 6 6 6 c chicken broth
- 1-1/2 1-1/2 1-1/2 c ditalini pasta
- 1-1/2 1-1/2 1-1/2 c frozen peas
- salt and pepper
- 1 1 1 c grated parmesan cheese
- 1/2 1/2 1/2 lb Italian sausage, casings removed
Apple-Pear Salad with Lemon-Poppy Seed Dressing

Salad: Toss together the salad ingredients in a large bowl; serve with Lemon-Poppy Seed Dressing
- Salad:
- 1 (16 oz) pkg romaine lettuce, thoroughly washed
- 1 (6 oz) block Swiss cheese, shaved
- 1 c roasted, salted cashews
- 1 / c sweetened dried cranberries
- 1 large apple, thinly sliced
- 1 large pear, thinly sliced
- Lemon-Poppy Seed Dressing:
- 2/3 c light olive oil
- 1/2 c sugar
- 1/3 c fresh lemon juice
- 1-1/2 Tbsp poppy seeds
- 2 tsp finely chopped onion
- 1 tsp Dijon mustard
- 1/2 tsp salt
