Skillet Sausage 'n' Rice

1. Cut sausage into 1/2-inch slices
- 1 (16-oz.) package smoked sausage
- 1 medium-size green bell pepper, chopped
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 cup chicken broth
- 2 (3.5-oz.) bags quick-cooking brown rice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Garnish: chopped fresh parsley
Quick Creamy Vegetable Dip

Stir together first 9 ingredients in a medium bowl
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup drained, chopped jarred roasted red bell peppers*
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/2 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 1/8 teaspoon hot sauce
- Baby carrots, celery sticks, radish slices
- Preparation
- 1 (2-ounce) jar diced pimiento, drained, may be substituted.
Penne with Pancetta, Peas & Mascarpone

Bring a large pot of water to a boil for cooking the pasta
- 2 Tbsp olive oil
- 1/4 lb pancetta, diced
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 c dry white wine
- 1 c chicken stock
- 1/4 c heavy cream
- 2 c frozen peas
- Salt and pepper
- 1 lb penne pasta
- 3/4 c mascarpone
- 1 Tbsp fresh lemon juice
- Grated pecorino cheese, for garnish
- Mint and parsley, finely chopped, for garnish
Spring Salmon with Asparagus & Peas

Preheat the oven to 375º
- 4 4 4 skinless salmon fillets (6-8 oz each)
- 4 4 4 Tbsp butter, at room temperature
- 2 2 2 Tbsp capers, drained and chopped
- 2 2 2 Tbsp (about 2 palmfuls) fresh dill, chopped
- Salt and pepper
- 1/4 1/4 1/4 c EVOO
- 1/2 1/2 2 lemon, juiced (about 2 Tbsp.)
- 2 2 2 Tbsp white wine vinegar or white balsamic vinegar
- 1 1 1 large shallot, minced or grated
- 2 2 2 cloves garlic, grated or pasted
- 1 1 1 rounded tsp Dijon mustard
- 1 1 1 bunch asparagus, tough ends trimmed
- 1-1/2 1-1/2 1-1/2 c shelled fresh peas
- 1 1 1 c cherry tomatoes, any color, quartered
- handful a handful of tarragon leaves, coarsely chopped
Balsamic Chicken & Pears

Sprinkle chicken breasts with salt and pepper
- 4 boneless skinless chicken breast halves (6 oz each)
- 3/4 tsp salt
- 1/2 tsp pepper
- 1 Tbsp canola oil
- 1 c chicken broth
- 3 Tbsp while balsamic vinegar
- 1/2 tsp minced fresh rosemary
- 2 tsp cornstarch
- 1-1/2 tsp sugar
- 2 medium unpeeled pears, each cut into 8 wedges
- 1/3 c dried cherries or dried cranberries
- Fresh rosemary sprigs, optional
- I think it could have used more sauce - consider doubling it.

- 1 can (14-1/2 oz) diced tomatoes, well drained
- 1 large onion, thinly sliced (about 1 cup)
- 1/3 c pitted kalamata olives, halved
- 2 c cubed or shredded cooked chicken
- 1-1/3 c crumbled goat cheese
- 1 tsp minced fresh rosemary or 1/4 tsp dried rosemary, crushed
- 1/2 tsp garlic salt
- 1/2 tsp pepper
Greek Beef Wraps

- 1 cup chopped onion
- 1/4 cup each green and red bell pepper
