- 3 c uncooked penne pasta
- 2 c heavy whipping cream
- 1 pkg (8 oz) cream cheese, softened and cubed
- 1-1/2 c (6 oz) shredded Swiss cheese, divided
- 1/2 tsp onion powder
- 1/2 tsp garlic salt
- 1/4 tsp pepper
- 3 c sliced cooked chicken breast
- 3/4 c crumbled cooked bacon
- 3/4 c cubed fully cooked ham
- 3 Tbsp dry bread crumbs
Sausage Calzones

Preheat oven to 425. Brown sausage in the olive oil
- 1-1/3 lbs bulk Italian sweet sausage
- extra virgin olive oil
- 2 c ricotta cheese
- a handful of fresh flat leaf parsley, chopped
- 2 cloves garlic, chopped
- a handful of grated Parmesan cheese
- a few grinds of freshly ground pepper
- 2 Tbsp chopped pimiento
- 2 tubes prepared, refrigerated pizza dough - 10 oz each
- 2 c shredded mozzarella cheese
- 2 tomato, marinara or pizza sauce - warmed
Butter Pecan Chicken

Place chicken in a shallow bowl or pan
- 6 boneless, skinless chicken breast halves, flattened wo about 1/4 inch, see note
- 2 c buttermilk
- 1 c finely ground dry breadcrumbs
- 1/2 c chopped pecans, toasted, see note
- 2 tsp fresh thyme leaves
- 1 tsp dry mustard
- 1/2 tsp each: red pepper flakes, salt and freshly ground black pepper
- 2 Tbsp each: coarse mustard, melted unsalted butter
- 1 Tbsp honey
- 2 Tbsp olive oil
Pumpkin Gooey Butter Cakes

Preheat oven to 350 degrees F
- Cake:
- 1 (18 1/4-ounce) package yellow cake mix
- 1 egg
- 8 tablespoons butter, melted
- Filling:
- 1 (8-ounce) package cream cheese, softened
- 1 (15-ounce) can pumpkin
- 3 eggs
- 1 teaspoon vanilla
- 8 tablespoons butter, melted
- 1 (16-ounce) box powdered sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- Serve with fresh whipped cream.
- Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.
- For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.
- For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.
Tilapia Baked in Parchment

In a medium Dutch oven, combine potatoes and water to cover
- 2 cups cubed new potatoes (1-inch pieces)
- 3 tablespoons butter, softened
- 3 tablespoons minced fresh parsley
- 2 tablespoons lemon zest
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced green onion
- 2 teaspoons minced fresh dill
- 2 cloves garlic, minced
- 4 (6-ounce) tilapia fillets
- 2 cups sugar snap peas
- 1 1⁄2 cups matchstick carrots
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- Garnish: lemon wedges
